Hello everyone,
I am a new reader to CL. I am 19, and i have a daughter who is 14 months old. I just thought i'd introduce my self before i go on...
I am in search of quick and healthy breakfasts, not big meals like on the weekends. Just quick ideas for weekdays. I tried doing a search on "breakfasts" and although some yummy looking recipes came up (like the SW Casarole) the results weren't things

Welcome to the BB Kylie http://www.cookinglight.com/bbs/smile.gif! The only ideas I can come up with are the kinds of things my family eats when we want a quick meal while rushing around in the morning. http://www.cookinglight.com/bbs/smile.gif Zinnia
1. 'Healthy' cold cereal or microwaved hot cereal/oatmeal with fixins, and fresh fruit and/or juice.
2. Scrambled egg sandwiches- on toast with a slice of cheese, s&p and juice. (I make ham, egg, & cheese sandwiches sometimes too).
3. A cup of yogurt sprinkled with granola or wheat germ and a piece of fruit & juice.
4. Piece of fruit with a wedge of cheese and wheat crackers & milk or juice.
5. Quiche-(or a CL or Grace's Breakfast Casserole);make a whole one and freeze portions for a quick breakfast you can zap in micro. add fresh fruit on side and juice/milk.
6. Make a big batch of whole wheat waffles, pancakes, or french toast and freeze in portions-a quick zap in microwave and you have a meal, with fruit and juice or milk.
7. Breakfast/snack bars dipped in or eaten w/ a cont. of yogurt or fresh fruit and juice.

Welcome to the BB! I can't add much to what Zinnia said. You must be very busy, being a mom and a student (I looked at your profile http://www.cookinglight.com/bbs/smile.gif ). I'm the mom of a 3yo and a 6 mo and sometimes can hardly find time to feed myself! I make big batches of healthy muffins and freeze them (which is on my list of things to do today). A muffin and oj is my favorite breakfast, and they are good for snacks, too. In a pinch I'll mix up a Carnation Instant Breakfast...there are a lot of nutrients in them. Hi Kylie!
One other thing I might add is that I've really been into making breads lately . . .banana bread, zucchini bread, etc. These are great in the mornings for a quick breakfast and they freeze well. I've also made up muffins, waffles & pancakes (there is a good recipe for these last two in the CL Light Cookbook) in a batch and freeze the leftovers. There is a peanut butter & honey muffin recipe from a few CL issues back (maybe a couple of years now that I think about it) that may be on the website here. Very handy to pop in the microwave. I have a 4 1/2 month old baby so I know what it's like to try and get something to eat quickly and get yourself and baby out the door! Hope these ideas help!

Another idea (one I used when my kids were little) are shakes made with yogurt, fruit, milk (or juice) and granola.
None of us are huge fans of breakfast foods, so leftovers also works well.

Hi..I don't have kids, but I like to make soft-boiled eggs for breakfast -- they're fairly quick and easy -- just boil water! http://www.cookinglight.com/bbs/smile.gif

Speaking of Egg Sandwich...
I break an egg onto a saucer, mix in a tiny bit of water and parmesean cheese with the egg. Cook in the microwave till done (approx 1 minute). In the meantime I toast 2 slices of bread. I lightly butter the toast and then put the egg between the toast. It is really fast and tasty.
Although, on a daily basis, oatmeal cooked in the microwave (1 part quick cooking oatmeal - 2 parts water) works best for me. I add plain soy milk and sugar.
