I'm helping some friends move next weekend and thought it would be fun to take over a meal since they will be so busy. I would like to make either a cold salad or something that does well in the crockpot. The husband doesnt like cheese, but other than that there are no restrictions. Any ideas? TIA!

How about this? After a hard day of moving this would be perfect and the cheese is nice (I use provolone) but wouldn't take away at all if the husband opted to leave it off. Maybe pick up some ice cream bars/sandwiches for dessert, assuming they have a working freezer at their new place.

CrockPot Italian Beef

3 lb. chuck or rump roast -- approx. -- trimmed of fat
1 package Good Seasons Zesty Italian salad dressing
mix
2 teaspoons Italian seasoning
1/2 jar pepperoncini peppers -- including juice
1 can beef broth
(or 1 to 2 cups hot water mixed with a
teaspoon or two of beef flavored Better
than Bouillon)--or moreif needed
ground pepper -- optional
garlic powder -- optional
favorite cheese
kaiser buns
Mix all ingredients together in a slow cooker or crockpot. Cook all day on low (or #3 in a slow cooker). (I use my slow-cooker)
When meat is done, shred it and put back in its juices.
Serve on warm kaiser buns (toast if desired). Top with favorite cheese--cheddar, colby/jack, mozzarella/cheddar, etc. Warm in the microwave if cheese needs to be melted.
Can also top with sauteed onions, green peppers, and mushrooms if desired.

NOTES : This is a very forgiving recipe. If roast is large add another pkg. of Italian salad dressing mix and more beef broth. Using more broth will leave you with more juices to dip your sandwich in. You can use less peppers, too.

Barefoot Contessa's Shrimp Salad recipe & Gazpacho Soup recipe. Both are cold and can be made ahead of time so easy on you, delicious and great for a summer meal especially after moving. Serve some crusty bread along with them. You could even do a complete meal by Ina and make some of her lemon bars for dessert!:) Sounds good to me!
