Summer is just about here. I would like to try grilling sandwiches on our bbq for dinner during the week. Any ideas for easy to put together sandwiches?

It's funny you should bring this up. I was just thinking about a grilled sandwich that I haven't made in a while. The following is for one sandwich although the butter mixture will go pretty far.
Mix together one stick or butter or margarine with two tbs. of onion soup mix and one tbs or horseradish. Spread on two slices of bread - buttered sides will be on the inside of the sandwich. On one slice put thinly sliced roast beef and a slice of mozzarella or provolone cheese. Cover with other slice of bread. Spread outside of bread with more of the butter mixure (or plain butter) and grill. Roasted red peppers or onion slices or sauteed onions are also good in this. I also like this butter mixture on steak or hamburger.

here is one i got from a cooking class
Grilled Black Forest Ham Sandwiches with Roma Tomato, Field Greens in Dijon-Shallot Vinaigrette and Pest-Cream Cheese on Focaccia
Dijon-Shallot Vinaigrette
1/4 c balsamic vinegar
1 tsp minced shallot
1 tsp dijon mustard
kosher salt
freshly ground black pepper
1/4 tsp brown sugar
1/4 cup olive oil
Whisk all but the olive oil together in a small bowl. once mixed, gradually add the olive oil whisking to thoroughly combine. taste and adust seasonings set aside
Pesto-Cream Cheese
1 c cream cheese, softened
1/4 c unsalted butter, softened
1/3 c basil pesto (teacher suggested the brand CIBO)
place the cream cheese and butter into food processor or electric mixer and combine weill. add the pesto and thoroughly combine. set aside
Assembly
fresh focaccia split horizontally (big one) *********
2 lbs black forest ham
4 cups fresh field greens
4 roma tonato sliced
2 tbsp olive oil
spread pesto cream cheese onto the inside of focaccia tops. put ham onto the bottom half. gentel toss the vinaigrette into the field greens and pile atop the ham. spread tomatos over that. top with focaccia.
heat 1 tbsp of olive oil in a very LARGE saute pan over medium high heat until hot. add the sandwich and cook on each side until brown, 2-3 minutes per side. cute and serve.
we were shown how to do it in a pan because it can get a bit messy

Buddie --- That sounds great. I bet it will work on the bbq. Maybe putting foil underneath and using a hamburger press.
