I just threw this one together for my lunch (I happened to have the ingredients on hand), and it was fantastic!!!! I will be making this one often, for sure. Especially in the summer for those picnics, long bike rides, etc. I didn't have any red onion, so I left that out entirely, but evenso it was really colorful, flavorful and filling. I loved it.

I just received my April copy today and I have this one marked to try, along with just about every other recipe in it. So many great sounding recipes this month! Now I will check for reviews. Didn't want to until I had mine, I would have been jealous.

This was a fantastic recipe. I had bought some fresh shrimp from a girl at work who runs a shrimp boat. This salad was a perfect way to showcase this fresh fabulous shrimp! I also love the peas, not many recipe ask for peas from CL. If you live near the gulf or anywhere shrimp is plentiful do not pass up this recipe!

This is probably a silly question, but I don't eat seafood and I was wondering how this salad would be without the shrimp?

I think it would be fine without the shrimp. The dressing is good and there are lots vegetables in it. It could be a great "Vegetarian" pasta salad. Give it a try!

Thanks for the input Peggy. I love pasta salads when it's warm out and this one sounded so good and got great reviews. I'd hate to pass on it because of the shrimp.

Spring Tortellini Salad

INGREDIENTS FOR 6 SERVINGS:
Dressing:
1/4 cup red wine vinegar
2 tablespoons extra-virgin olive oil
4 teaspoons spicy brown or Dijon mustard
2 teaspoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 garlic cloves, minced
Salad:
1 (9-ounce) package fresh cheese tortellini, uncooked
2 cups frozen medium shrimp
3/4 cup thinly sliced carrot
2 cups finely chopped tomato
1 cup frozen green peas, thawed
1/2 cup finely chopped red onion
INSTRUCTIONS:
Any fresh vegetables can be used here. The flavor is best if you chill the
salad for 30 minutes before serving.
1. To prepare dressing, combine first 7 ingredients in a small bowl, and stir
well with a whisk.
2. To prepare salad, cook tortellini in boiling water for 6 minutes. Add
shrimp and carrot; cook 3 minutes. Drain well. Combine pasta mixture, tomato,
peas, and onion in a large bowl; pour dressing over salad, tossing gently to
coat. Cover and chill 30 minutes. Yield: 6 servings (serving size: 1-1/3 cups).

Is the red wine vinegar taste very overwhelming in this? I actually hate red wine vinegar, and that is stopping me from trying this. Otherwise, it looks great.

I made this recipe without shrimp. Cannot stand seafood. I used some chicken instead and it was great. And I do not recall the red wine vinegar being overpowering at all.

i didn't add the shrimp but i thought it would be good with chicken for next time.
i did add red pepper and mushrooms.

I made the salad without the shrimp and even my DH liked it. He doesn't usually like pasta salads but the dressing won him over for this recipe. A keeper for sure.
