View Full Version : Full weekend of CL/BB recipes

Now that I finally have free time during the weekend, I made CL/Reader recipes all weekend (except Friday). Here goes:

Friday night: Bought 2 whole trout and cooked on pan, using wine instead of oil so they wouldn't burn (about 1/2 cup of wine). Stuffed trout with some thyme sprigs (bought them for Leek Risotto) and "psycho'd" the trout and put garlic in the wholes. Turned out great, with tomato and onion salad on the side.

Saturday: Finally made Leek and Marscapone cheese (only to be found at TJ's) Risotto. It was great. I actually made the EXACT recipe (including the stock). I am VERY proud of myself. My husband and FIL gave it rave reviews.

Sunday: We had a BBQ. Decided to bite the bullet, buy a whole chiken, take out the guts (EWWWWWWWWWWWWWWWWWWWWWWWWW!!!), and make the famous Psycho chicken. The only variation, was that I made it on the BBQ. This was in thanks to another BB member, who said that was how she made it. I used a roasting pan on the BBQ, and put it over the burners not in use (we have a 5 burner grill, and we absolutely love it). Every 20 minutes or so I would dump white wine on it. It turned out to be the moistest chicken I've had in a long time. It was truly great. I was even asked for the recipe.

Everyone refused to try them at first, but after they did, WOW! We made a couple of pitchers of these. Really good.
