Hi all! I don't know if this has been chatted about before, but I've been wondering how CL decides just how many "steps" they will break a recipe into. For instance, after hearing everyone rave about it, I made the tofu chocolate mousse yesterday. The recipe is divided up into 2 steps-- the first step has you blending the tofu and melted chocolate in the food processor, but then the second step includes: beating egg whites until stiff, cooking sugar and water into a syrup on the stove, pouring the syrup into the egg whites and then folding the whites into the tofu mixture. That sounds more like 4 steps to me! I've seen this kind of simplification going on in other CL, but in others they will break everything down into what seems like a more appropriate number of steps.
Are they just trying to make the recipes look easier? IMO, it makes it difficult to assess (on first glance) just how involved or simple a recipe is. Does this bug anyone else besides me?
