Please post your favorite recipes using vidalia onions. I just bought several big ones yesterday and can't wait to use them.

Vidalia Onion and Mushroom Casserole

Amount Measure Ingredient -- Preparation Method

5 cups Vadalia onions quartered
1/4 cup butter
1/2 tsp salt
1 1/2 cups fresh mushrooms sliced
3 oz cream cheese
3 tsp flour
1 1/2 cups milk
1/4 cup grated cheddar cheese
1/4 cracker crumbs (plain Ritz or any buttery cracker will do)


Combine onions,butter mushrooms and salt and cook until onions are clear.Add cream cheese.When melted add flour and milk.Cook until thickened. Pour into a pammed 2 qt casserole dish and cover with a mixture of the cheddar cheese and crackers.Bake at 400 deg. for 30 min.

We love this pizza, and the Florentine Frittata...

I too, bought a big bag of Vidalias yesterday, so I'll be interested in other's ideas as well!

Vidalia Onion Pizza

INGREDIENTS FOR 8 SERVINGS:
1 (16-ounce) box hot roll mix
1-1/3 cups very warm water (120 degrees to 130 degrees degrees)
1/4 cup all-purpose flour
Cooking spray
2-1/2 teaspoons olive oil, divided
6 cups vertically sliced Vidalia or other sweet onion (about 1-1/2 pounds)
1-1/2 cups (6 ounces) grated Jarlsberg or Swiss cheese
1/2 cup (2 ounces) grated Asiago or Parmesan cheese

INSTRUCTIONS:
You can saute the onions while the pizza crusts rise.

1. Combine contents of roll mix and enclosed yeast packet in a large bowl;
stir well. Add very warm water; stir well. Turn dough out onto a lightly
floured surface. Knead until smooth and elastic (about 5 minutes); add 1/4 cup
flour, one tablespoon at a time as needed, to prevent dough from sticking to
hands. Cover and let rest 5 minutes.

2. Divide dough in half. Roll each half of dough into a 12-inch circle on a
lightly floured surface. Place each circle of dough on a (12-inch) pizza pan
coated with cooking spray; pierce several times with a fork. Cover and let
rise in a warm place (85 degrees), free from drafts, 15 minutes or until
puffy. Brush 1/2 teaspoon oil over each crust.

3. Preheat oven to 450 degrees.

4. Heat remaining 1-1/2 teaspoons oil in a large Dutch oven over medium heat.
Add onion, and saute 20 minutes or until golden brown.

5. Sprinkle 3/4 cup Jarlsberg cheese over each pizza crust. Divide the
caramelized onion evenly between each pizza; sprinkle each with 1/4 cup Asiago
cheese. Bake at 450 degrees for 15 minutes or until lightly browned. Cut each
pizza into 8 wedges. Yield: 8 servings (serving size: 2 wedges).

Glorified Vidalia Onions

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
5 medium sweet onions -- (5 to 6)
1/2 cup apple cider vinegar
1 cup sugar
2 cups water
1/2 cup mayonnaise
1 teaspoon celery seed

Finely chop or grate onions. Soak onions in the water, sugar, and vinegar for 4 hours. Drain well. Pat dry.

Mix onions with mayonnaise and celery seed. Serve with buttery crackers.

Balsamic Vidalia Onions

1 Vidalia Onion
1 beef boullion cube or equivalent of powdered boullion
2 Tbsp. balsamic vinegar or 2 tsp. olive oil

Preheat oven to 350.

Cut cone-shaped piece from top of onion and mince.

Place onion and minced top in oven/grill proof single-serving dish.

Put boullion in onion cavity and pour vinegar OR oil over.

Cover with aluminum foil and bake for 1 hour or "bake" on upper shelf of grill for same amount of time.

Microwaved Vidalia Onions

1 Vidalia Onion
1 Beef bullion cube
Pat of Butter
Splash of Water
Parmesan Cheese, to taste

Cut a core in the top of the onion. Put a beef boullion cube inside with a pat of butter.

Put in a small microwave safe dish, add a little water to the dish and microwave for about 3 minutes. This will depend on the size of the onions.

Cover loosley with plastic wrap. Take out and check for doneness.

When done add some parmesan cheese and return to melt cheese.

These can also be roasted on the grill wrapped in foil.

Vidalia Onion Soup

For two servings:

1 large Vidalia onion, sliced thinly
3 Tbsp. balsamic vinegar
1 cup beef stock (canned is fine)
grated cheese of your choice (Parmesan, cheddar, gouda, etc.)

Preheat oven to 375.

Divide onions between two ovenproof bowls. Divide vinegar and stock between bowls.

Cover with aluminum foil and bake for 1 hour.

Top with as much or as little cheese (or none) and serve with crusty bread.

This is one of my favourites...when I can find Vidalia Onions that is. I got it at the supermarket. I tried making this with "low-fat" biscuit mix (such as Bisquick), but I didn't like it as much. Never tried it with low-fat cheddar though...maybe that would work if you want to cut fat/calories?

Vidalia Onion Cheese Bread (muffins, really)
1/2 cup chopped V. onions
1 tbsp butter or low-fat margarine
1 cup cheddar cheese -- grated
1 1/2 cups biscuit mix
1 egg, beaten
1 cup milk OR buttermilk
1 tablespoon sesame seed
2 tablespoons melted butter or margarine

Saute onions in butter until clear. Add half the cheese to dry biscuit mix. Combine egg and milk, add to the mix. Stir slowly. Add onions. fill greased muffin tins 1/2 to 3/4 full. Sprinkle tops with remaining cheese and seeds. Drizzle melted butter over top. Bake in hot oven, about 400 for 20 minutes or until brown. Makes 10 to 12 muffins.

Grilled Sweet Onions

Dress up any barbecued meat, poultry, or fish with these sweet onions cut to resemble flowers. Choose Vidalia, Walla Walla, or other locally available sweet onions.

4 medium sweet onions (4 to 5 ounces each)
1 tablespoon margarine or butter
1 teaspoon Dijon-style mustard
1/8 teaspoon bottled hot pepper sauce
1 tablespoon brown sugar
Pepper

Peel onions; cut almost through each onion forming 8 wedges. Tear off four 24x18-inch pieces of heavy foil. Fold each in half crosswise. Trim to make 12-inch squares. Place an onion in the center of each foil square. Stir together margarine or butter, mustard, and hot pepper sauce. Drizzle mixture over onions. Sprinkle with brown sugar. Bring up two opposite edges of each foil square and seal with double fold. Then fold remaining ends to completely enclose each onion, leaving space for steam to build.
Arrange preheated coals around drip pan in a covered grill. Test for medium heat above pan. Place foil packets on grill over drip pan. Cover and grill for 25 minutes or until onions are nearly tender. Make a 2-inch opening in the top of each packet. Cover and grill for 10 minutes more or until onions are lightly browned. Sprinkle with pepper. Makes 4 servings.

This dessert recipe is interesting and I have been wanting to try it:

Sweet Onion & Apple Upside Down Cake

This unique, heart-healthy cake recipe, from Chef Dwight Simmons of Kona Jack's Fish Market and Restaurant, was the winner in the dessert competition at the annual "Dining A La Heart" event in Indianapolis.

Nonfat cooking spray
1 medium sweet onion, peeled and sliced into 1-inch strips
8 Granny Smith apples, peeled and sliced into 1/8-inch slices
1/3 cup reduced calorie stick margarine
3/4 cup brown sugar, packed
Confectioner's sugar

Batter:
4 egg whites
3/4 cup plus 2 tablespoons all-purpose flour
1 1/2 teaspoon baking powder
5 ounces skim milk
3/4 cup plus 2 tablespoons granulated sugar

Preheat oven to 350 degrees.

Liberally spray 2 baking sheets with nonfat cooking spray. Place onions on one baking sheet and apple slices on the other. Bake onions until caramelized, for about 1 hour. Bake apples for about 4-5 minutes; remove from oven and set aside.

Melt margarine in a 10-inch skillet and add brown sugar. Stir with wooden spoon until dissolved. Remove pan from heat, add caramelized onions and set aside.

In the large bowl of an electric mixer, beat egg whites until foamy and add flour, baking powder, milk and sugar until well incorporated. Spray a 9-inch baking pan with nonfat cooking spray and then line with parchment paper. Layer brown sugar-onion mixture on parchment paper. Place the sliced apples over the onions. Press down to fill gaps between the apples. Cover with batter and bake about 45 minutes or until center tests clean. Remove from oven and cool to room temperature. Reverse the pan onto a serving tray and lightly dust with confectioner's sugar.

Yield: 8 servings

Nutrition Information for 1 Serving:
300 calories
4 grams fat
1 gram saturated fat
0 milligrams cholesterol
210 milligrams sodium

We had this topic once before - but I can't find the thread.

I do one similar to Linda's microwaved vidallia onions - core the top & put in a beef bullion cube. double-wrap in aluminum foil & put on the grill. They get really juicy & yummy. Keep it on a cooler part of the grill & leave them on for a while to give them time to caramelize.

Vidalia Onion Dip:

1 Onion Chopped
1 Cup of Mayonnaise (I use light)
1 8 Oz Tub of Softened Cream Cheese
1 Cup of Shredded Parmesan Cheese

Mix all ingredients and bake at 350 degrees for 30 minutes. Serve with triscuits or some other hearty cracker - or pita bread.
Really good - always a hit at parties.

Thanks everybody! This weekend I ended up making the glorified vidalia onions and the microwave vidalia onion that I posted. Both were yummy! I had to cook the microwave vidalia onion longer than stated though and I added a little balsamic vinegar to the water.

Here are two other yummy vidalia onion recipes. Not light at all, but I only make them once a year! http://www.cookinglight.com/bbs/tongue.gif I could make a meal out of the onion rings.

Baked Vidalia Onion Dip

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3/4 to 1 cup finely chopped Vidalia onions
1/2 cup mayonnaise
1/2 cup grated sharp cheddar or swiss cheese
1/8 to 1/4 tsp. Tabasco sauce
1/4 cup grated Parmesan cheese (not the powder!)
paprika -- to taste

Preheat oven to 350° F.

Mix onions, mayonnaise, cheddar or swiss cheese and Tabasco.

Spread into small baking dish or pie plate. (I used a 7 inch square Corningware dish).

Top with Parmesan cheese and sprinkle with paprika to taste.

Bake in preheated oven at 350 for approx. 30 min. Serve warm with crackers like Ritz, Club, etc.

NOTES : Double, triple, or quadruple this recipe for a large gathering.

Blot the extra grease off the top with paper towels if neccesary.

Vegetable Batter

3/4 cup cornstarch
1/4 cup all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
1/8 tsp. pepper -- (1/8 to 1/4)
1/2 cup water
1 egg -- lightly beaten

In a bowl, stir together first 5 ingredients.

Add water and egg, stir until smooth.

Dip and coat vegetables and fry in hot oil (375 deg.) atleast 2-3 minutes, turning once, until golden brown.

Drain on paper towels and season with salt, if desired.


NOTES : This is wonderful for mushrooms, onions (sweet like Vidalia, etc.), zucchini, etc. I always use my Fry-Daddy to cook these in.

Okay, I have to add my favorite -- I'm so sorry I don't have the recipe right now to post, but they're Rosemary-Glazed Vidalia Onions...so melt-in-your-mouth delicious. I really should fish that recipe out, since we're bombarded with the things right now. http://www.cookinglight.com/bbs/smile.gif

Thought I'd bump this one up a bit since I went hunting for recipes and found this thread with lots of great ideas.

I just realized that I have a sack of vidalia onions in the pantry that are in need of cooking.:eek:

I posted awhile back one of my favourite CL recipes that uses Vidalia onions - I can't remember the exact name but it's something like Spicy Chicken with Caramelized Vidalia Onion and Red Pepper Relish. Oh, I never waste my precious onions in RECIPES!!! I usually hoard them to myself, or when I share I make onion rings with dinner. I either use a batter (basic beer batter) or I just bread them with bread crumbs and fry them. Serve with BBQ sauce, ketchup, or my favorite, mayo (lite Miracle Whip) mixed with a healthy amount of horseradish!!

Oh, I love those onions!!!

...another favorite is just to slow saute them in olive oil until they are golden and serve on a ham sandwich or with a grilled chicken breast.

I can't believe no one has mentioned the Vidalia & Feta Risotto - or is that just a given? I tried it recently after all the praise it got here and it is fabulous.
