This weekend, I made the spring vegetable risottow with peas and asparagus - They ware in season ast my Farmer's Market and I just had to buy them. I also added some extra cooked chicken,chopped red pepper and a iny bit of parmesano regaggio at the very end. It was the most fantastic dish! It was creamy, easy to make, and even won over my anit-veggie husband - he ven asked for seconds! Anyone who has a chance should make it, it is quite a worthy dish!

I also have a veggie-wary husband. Always looking for ways to sneak in new veggies, as I get tired of potatoes and corn. thanks for the tip!
(Actually -- I made the zucchini coins last night and he loved them! Found that recipe on another thread. You definitely have to serve them warm, otherwise he said they taste like vegetables :-)

I made the microwave shrimp risotto last night with the Asiago cheese and used fresh corn instead of frozen. It was very good also.

Do you think that I could make this recipe using all asparagus or asparagus and frozen peas? We have wonderful fresh asparagus right now (Virginia Beach) but not yet peas. The recipe sounds wonderful and I have been wanting to make it sooner than later...

i made the Spring Risotto with peas and Asparagus this past weekend. I was surprised to see how rich and creamy it turned out. I used frozen peas because they were handy. I bet this would be great with a little bit of cheese.

Another thumbs up for this one! My hubby kept asking - the flavors are so good, what's in this??? The two main flavors are mint and lemon - wonderful!!

Masimmons-
I can't imagine you that you can't use asparagus only I think this recipe is pretty flixible on the veggies- in fact, I am making it tomorrow with shrimp
