View Full Version : How was your weekend without the BB?
Well how nice to be back! I hope everyone "survived" the weekend. Since we all had so much free time, I was wondering what everyone did this weekend and what they cooked.
We had lovely weather here in Victoria so we were outside alot. Spent Saturday at a trackmeet and that night made the the [b Ecuador Potatoes roasted asparagus and for dessert .
Sunday we had a simple dinner of pita pizzas and a big green salad as we spent the day running, relaxing and puttering in the garden.
We really enjoyed the salmon but my favorite is still [b Maple glazed Salmon . I didn't think the potaoes were anything great- a little bland and they stuck to my non-stick skillet. The cake was very good- moist and appley (?). I added cinnamon to to the top as I love that combination.
Not very exciting stuff but a nice stay at home for the most part weekend. Did I mention I checked the BB every hour on Friday before giving up for the weekend? Okay so I peeked Saturday morning just in case- I swear I was fine, I really was...
So what did I do wrong with the bold thing? Should I have left a space??

The thing is, for me, I am rarely here on the weekend - I come in on Monday to check up on what I missed, then check in periodically (ok ok, quite often) during the week. So I didn't miss it this weekend, but certainly felt the effects this morning!!! http://www.cookinglight.com/bbs/biggrin.gif

I'm with SandyM. I don't usually get on the board very often on the weekend and have to catch up on Monday. Yes, I too feel the effects!

As for this board, it is finally working for me just now. I don't know how all you posted this morning. It was still blank for me then. I just hope it stays on!

My weekend was fine, but I definitely missed the BB. We had our CL club dinner last night and I was trying to post how great everything was and it was frustrating! But I spent a lot less time on the internet because of it. Our dinner last night was fantastic. We had the peanut and yellow split pea dips (April), also from April the salmon pesto, corn risotto, stuffed chicken with Marsala, and strawberries and cream cake (which we totally consumed; there were only 7 of us!) Also the asparagus dish from the May issue. All were delicious. Oh, it's so good to be back on the BB. I should write a song... http://www.cookinglight.com/bbs/biggrin.gif

Actually I got more household jobs completed, next weekend, the garden!!!

I was like Susan - kept checking very often - to see if the board was back up or if I couldn't get on because of my computer. I am really glad whatever was wrong is now fixed. Please stay fixed too!

Well, I was in desparate need of suggestions on ways to prepare Chilean Sea Bass, and couldn't get in... so, I had to create my own little marinade for the grill. I drizzeled some olive oil over the fillets and put a bit of minced garlice on all pieces (both sides) and then sprinkled with a scampi seasoning my MIL gave me some time ago. Turned out very good, but I really would have liked some suggestions from the board!

Huh! I was uncharacteristically busy this weekend and didn't get a chance to crack the board, however yesterday, Monday, I couldn't get it to save my life. Was it down for three days or two?

I was actually pretty busy this weekend at Music Midtown (Atlanta's 3-day music festival), so I wasn't absolutely devastated, but I did check in more than a few times http://www.cookinglight.com/bbs/wink.gif
Kima, that's so funny; I actually made the Maple-Glazed Salmon and Sesame Roasted Asparagus on Friday -- I didn't think it was incredible as everyone says it is, at first, until I realized that I'd left out the hoisin sauce! I didn't even notice until the next day, so it was obviously still very good, but I'll definitely have to try this one again the right way http://www.cookinglight.com/bbs/smile.gif

Survived pretty well, actually. We were really busy this weekend. We went house/apartment hunting in Raleigh on Friday and Saturday and we actually found one! We were hoping to rent a house until we bought one in a couple of years, but settled on an apartment complex. Even I'll admit that it's really really nice. Anyway, we had very little time to find something. Heath's job at IBM starts on the 6th of June and our weekends are booked with weddings and graduations until the weekend before that. I think we had reached the desperation point. We were provided with a relocation agent, which cracked me up. It just seemed so...adult. She was nice, though, and helped us a lot. I'm really happy with the whole situation-we're ready to move in any time. It's nice to be back on the boards, though. I was totally bored at work yesterday and that's when I felt it.

Jewel, I believe this is the enchilada recipe you have been searching for (originally posted by Lorelei?):
CHIPOTLE ENCHILADAS
3 half-breasts chicken, cooked and cubed
9 oz sharp cheddar cheese, grated
3/4 c minced onion
Sauce:
2T butter
2T flour
1 c beef broth
1 c water
1 t cumin
3 cloves garlic, minced
1 t oregano
3-4 canned chipotle chiles, seeded and minced
2 T adobo sauce from can
2 T sour cream
Melt the butter in a skillet. Stir in flour. Cook this roux until it is light brown. Remove pan from heat and slowly stir in broth. Place pan over medium heat and whisk in water. Add the spices, garlic, chiles, and adobo sauce. Simmer uncovered for 20 minutes. Whisk in sour cream.
Heat some oil in a skillet. Lightly fry a corn tortilla to soften it. Place it on a plate and fill with 1T cheese, 1T onion, and 1T chicken. Roll and place in a 9" x 13" dish. Repeat 12 times. Cover the enchiladas
with the chipotle sauce. Top with any remaining onions and cheese. Bake at 375 degrees for 8-10 minutes, just until the sauce bubbles.

I missed the board, as most everyone did last weekend. It's like having an "ace in the hole." Usually there when you need it. I tried to log on to acquire some help in preparing a "Meals on Wheels" to a friend. I ended up researching and everything is in order for delivery tomorrow night.
I used the time gardening rather than surfing the BB.

I was able to read the board this past weekend, but of course, couldn't post. So I spent quality time reading all the threads from the last couple of weeks - which I had only previously been able to glance at. It gave me the fix I needed!

I'm ashamed to say that I actually got some things done around the house that I'd been putting off because 'just a few minutes' on this board turns into an hour or two! I cleaned and straightened for my parent's arrival on Friday from California, and I'm trying to pick out recipes to make this weekend to keep my parents and my husband eating 'well' during my first few days after surgery on Monday. Not that my Mom can't cook, but it just feels weird to have her rummaging around my kitchen! I'm making my Mushroom Beef & Noodles in the crock pot on Friday night, and the French Toast Souffle on Saturday morning. I'm going to make the Chipotle Chicken Enchiladas on Sunday night if I can find the recipe!! I lost it and can't find it in 'search' of this BB! http://www.cookinglight.com/bbs/eek.gif If anyone has it handy, please-please-please post it for me! I'm also going to make a big pot of Cheesy Chicken Chowder on Sunday for them to eat on for a few days, and it will probably be something I can eat my first few days after surgery.
