I recently made the Florentine Fritatta and loved it. I want to make another fritatta, but cannot decide which recipe to try. Does anyone have any CL favorites? Please let me know. Thanks!!

I have to admit, I have made so much frittata, I dont really use recipes anymore, but here is one I made recently.
I used egg beaters, mixed in a little milk, added salt and pepper. Mixed in fresh made black beans and thawed-frozen corn, and cumin. I cooked on a large fry pan until almost set. then added feta cheese and put in a 450 oven until set.
It is soooo yummy!

There is an outstanding Smoked Salmon, Goat Cheese, Fresh Dill Frittata that I found on the CL recipe search. Here's my review of it:

If you do an on-line recipe search under frittata, it will also pull up Eggs Piperade- it's sort of a Basque frittata- also wonderful.

That is great that you posted this suggestion! I love that combo! I just made homemade pizza crust 2 nights ago, and seperated out 1 to put fresh dill into the crust. I did this because I'm going to make Smoked Salmon, Goat Cheese & Dill pizza (I found it on Epicurious, they actually have 3 different smoked salmon pizza ideas) on Sunday night when a girlfriend is coming over! I was searching for smoked salmon ideas last night, since I smoked about 7 pounds of salmon yesterday, and came across this thread, and the recipe for the Smoked Salmon and Goat Cheese Fritatta
I made it for lunch today, and we loved it!!! I increased the fresh dill, other than that made it exactly as written.
It only took about 20 minutes, start to finish. Wonderful lunch! I will definitely repeat this. DH inhaled two pieces- he who hates "quiche" and told me he'd never met a fritatta that he liked.
Until now, I guess.

These fritattas sound great. The ones I make are much simpler. My favorite is to peel a potato and cut it into small dice, chop an onion, and mince 2 cloves of garlic. Saute these until the potatoes are almost soft. Add the egg mixture and cook until set. Top with grated extra sharp cheddar and run it under the broiler. Yum! Gaye

I liked the following recipe, except that I used 6 whole eggs instead of the egg and egg white combo. and used fresh chard from my garden in place of the spinach, and served it with fresh salsa.
Spinach-and-Potato Frittata
1-1/2 cups diced peeled baking potato (about 6 ounces)
6 large egg whites
3 large eggs
1/4 cup diced Canadian bacon (about 2 slices)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
Cooking spray
1/2 cup chopped onion
2 tablespoons shredded reduced-fat sharp cheddar cheese
1. Preheat oven to 400 degrees.
2. Cook the potato in boiling water 5 minutes or until tender; drain.
3. Combine egg whites and eggs in a large bowl, stirring with a whisk. Stir in potato, Canadian bacon, salt, pepper, and
spinach.
4. Coat a 9-inch cast-iron skillet with cooking spray; place over medium-high heat. Add onion; sauté 4 minutes or until
tender. Add potato mixture to pan; cook over medium heat 5 minutes or until almost set. Sprinkle with cheese. Bake at 400 degrees for 6 minutes or until set. Let stand 3 minutes; cut into 4 wedges. Yield: 4 servings (serving size: 1 wedge).
