Asparagus salad with beans & feta(may 01)

another good salad. I rarely find a recipe that calls for radishes! This salad used up a whole bunch of asparagus with good results. This had lemon and mint in the dressing which paired real nice with the asparagus and feta.I also recommend that you eat this soon after you make it because it tastes best fresh and lukewarm.. Oh and BTW... asparagus really does give you smelly pee.. ( i ate alot of that salad i guess!) http://www.cookinglight.com/bbs/biggrin.gif

Ditto! We liked this one too, though I left out the radishes. (I'm not a real radish person.) I am so pleased with all of the good salad recipes in the May issue. Perfect timing for this hot weather!

I really, really wanted to make this salad, but when I went to the grocery store the asparagus was yellowed and a bit shriveled. So I bought green beans instead, and made the salad with steamed green beans and omitted the mint. We liked it a lot, and it was so easy! Now I'm going to try it with the asparagus!
