OK, I am on overload with recipes I want to make but... Why did I buy that box of saltine crackers? I have been looking through my files and can't find the recipe. I am having a senior moment and know that it was a great recipe, I just can't find it (yes I am wearing my glasses http://www.cookinglight.com/bbs/redface.gif)

Could it be the Chocolate Eclair Icebox dessert thing from CL? That uses saltines.

Could it be the salmon cakes from the March issue? I wanted to make them, but couldn't quite figure out what saltine crackers are because I didn't see a box labeled that way. Would any salty crispy crackers do?

But, in my own defense http://www.cookinglight.com/bbs/wink.gif , I have heard of people using saltines in this type of recipe - it's kind of like coating Ritz crackers with chocolate to make a cookie - sounds weird with all that salt, but it works!

I made the salmon cakes from the March issue tonight and those used crushed saltines, if that helps...?

yes, i have a big box of saltines in my pantry that i bought for the salmon cakes from March, they will probrably go stale because i hardly ever eat those things!

I had to reply in defense of lindrusso
I have made a candy recipe in the past using saltines and it is really easy and quite good. I don't have the exact recipe with me at work but basically here it is:
line a cookie sheet (with sides) with tin foil. Then line up the saltines in one layer on the cookie sheet. Brush them with a mixture of melted butter, white sugar and brown sugar. Bake (at 350, I think) for about 8 - 10 minutes, until lightly browned. As soon as you remove the tray from the oven pour a bag of miniature chocolate chips over the saltines and spread them out evenly (they melt very quickly and are easy to spread). Then you sprinkle with finely chopped walnuts. Refrigerate until cold. When they are cold remove from cookie sheet and break it into peices. It is like a brittle - it is very good. I have gotten rave reviews everytime I make them.

lauren, that sounds similar to the Derby Crunch recipe posted on this site a few weeks ago. I think it sounds great. I love a salty sweet combination. -valerie
