I just bought some the other day and it states that it Expires Oct. 12. I know that once it is open, the shelf life is not as long, but I wouldn't worry about it going bad within a week. Just do a sniff test before you use it.

Maybe someone out there knows better, as I am not really speaking from experience.

No, I'd agree -- a week should be fine. My mascarpone hasn't always lasted much longer than that once opened, but I'm a germ warrior http://www.cookinglight.com/bbs/biggrin.gif and usually just scrape any icky spots off -- I know, you're all cringing, but I can't stand wasting it!

I've had some in the fridge for about 2 or 3 weeks now and I checked it and looked and smelled fine-expired yesterday, but I'll probably end up finally using it up tomorrow. I don't get too worried about cheese unless it smells funky. Meat is another story-I'm super-paranoid about that. Anyway, a week should be fine. By the way, the tiramisu is really good. DH liked it even better than I did (that's what I'm making w/ the leftover cheese).

Does anyone know how long it lasts? I made the Leek and Mascarpone Cheese risotto and have leftover cheese. I want to make the white russian tiramisu this weekend, but don't know if the cheese will last a whole week.

Thanks for all your help! I think I'll make the tiramisu on Friday night.
