I'm entering a cheesecake in a bakeoff at work on Tuesday. I'm going to be busy on Monday night, so I want to bake the cheesecake on Sunday.

I can do that...right? I can store a cheesecake all perfectly done up and pretty in the fridge from Sunday afternoon till Tuesday morning? The crust won't get soggy or anything, right? I mean cheesecakes are meant to be refrigerated.

I'm also wondering how I should store it. Should I leave the springform around the pan or take it off? Covered or uncovered? I don't want it to sweat, and I know that sometimes covering baked goods can make them sweat, even in the fridge.

Normally I wouldn't be so anal about this, but since it's a Bakeoff Contest and I want to win, I have to make sure it's perfect and pretty when I take it to work on Tuesday! :) Thanks for any advice!

I Dogpiled "storing cheesecake in the refrigerator" and got

Storing Cheesecake

Make sure extra cheesecake is covered & refrigerated. It can be safely stored in the refrigerator for about 5 days. Remove a cheesecake from the refrigerator about 30 minutes before serving to enhance the flavour.

I think it will be fine, I would completely cover it with a plastic container, if you have one.

Good luck and let us know how well you do! Are you garnishing it or just serving it plain?

Thanks Susan! :) I'm actually entering our Apple Dessert bakeoff at work for our All American Day BBQ. I posted about finding a really delectable recipe a few weeks ago. I'm making a variation of two or three different recipes, but it's basically going to be a Caramel Apple Crunch Cheesecake when I'm done with it. ;)

The only plastic container I have that would fit the cheesecake is too big to fit in my fridge. I'm going to have to just keep it in the springform pan and cover it really tightly with foil for a day and a half, then take it out and use the plastic container (a tall cake container  ) to transport it to work. Just to keep it safe I'm probably going to have to transport it with the springform around the thing, then take if off before presenting it.

So far from what I've been able to pick up around the water cooler most are entering apple muffins, caramel apple crisps, apple pie... *yawn* I'm gonna take this one. :p

Thanks for the help!

Jewel - I have made quite a few cheesecakes, and I seem to remember it being important to make sure that it is completely cool before putting it in the fridge. I think maybe that helps prevent it from sweating. I would also leave it in the springform pan and cover it once it goes in the fridge.

Good luck!

To reduce sweating I have also left the cheesecake in the springform but before I covered I stretched a paper tower over the top and secured it with a rubber band. It seemed to keep any moisture off the cake and on the paper towel.

Thanks for the extra suggestions! I'm definitely going to try the paper towel trick. :)

I usually just pop my cheesecakes in the freezer once they have chilled in the fridge. You could take it to work in the morning and let it thaw in the fridge or on the counter. I don't notice any change in flavour or texture at all.

I like the idea about the paper towel!

I have only made two cheesecakes in my life and those fifteen years apart, so no tips from me. Just wanted to say.....GOOD LUCK! :)

Oh, almost forgot! Good luck! I would love to see what you did with those recipes. Love the name you gave the cheesecake - it sounds amazing!

I just realized...that's gonna have to be one big a$$ rubber band!

Before he left for Pennsylvania Friday night my husband did some weird photo editing and presented me with a photo of my head with a Miss America crown on top of it...and said "Visualization is everything...." :D:D:D

The nutso part of it is that it is ONLY a company-wide contest. We're talking maybe 200 people here. I'm not even sure what the prize is, but it'll be something like a dinner certificate to a restaurant in town, which will probably be a seafood place since we're in Seattle, and hubby and I both hate seafood. But...I don't care!!

I just wanna win.... :p

Oh, but it's ALL about the title and the tiara, isn't it?! :)
