Within the past couple of years, there was a recipe (for fish, I think) that described how to smoke food on the stove in a covered pot instead of in a smoker. Does anyone remember this? If so, I'd appreciate it if you could tell me what issue that appeared in. I've looked, but can't seem to find it. Thanks for any info.

This is from Graham Kerr, not CL, but I think it might answer your question. Scrunch up a piece of aluminum foil. In the center, layer in order: 2 Tbs brown sugar, 3 Tbs brown rice, 2 tea bags worth of tea (plain old American tea is fine, Earl Grey is really nice). Put the foil in the bottom of a dutch oven (be sure your sugar, rice & tea stay in the foil as it is going to "burn" and makes a real mess). Put a steamer basket in the dutch oven over the foil & heat it for 6 minutes, covered. It will smoke like crazy (use your exhaust fan!). Put chicken breast strips, salted lightly (or other meat) in the steamer basket, cover & cook for 10 minutes. Keep the meat in 1 layer so it will cook evenly. It should be done after 10 minutes but it depends on the thickness of the meat. After the pan has cooled, wrap up & discard the foil. Hope this helps.
