View Full Version : Review: Chicken and Strawberries over Mixed Greens - May '01

With the mercury climbing into the 90's here in California, it is time for cool salads for dinner! I made this recipe earlier this week and was very pleased with the results. I must admit to doubling the dressing part because I was afraid it would be alittle dry.
It was a terrific main dish salad. Though it was great for dinner, I think it would be especially good at a luncheon or shower event.

i made this recipe over the weekend. i was pretty satisfied with the flavors. i liked the combination of the balsamic vinegar and the strawberries. i made the recipe as is but i wish i doubled the dressing as it wasn't "wet" enough for me

Wish I'd seen these reviews before I made this recipe - followed it exactly and it was way too dry for us. There was no dressing for the greens. Consequently we weren't overly impressed (our strawberries perhaps could have been sweeter too?).

I've made this a couple of times for lunches and we loved it! Even my DH, who swears that he hates fruit mixed with his meals (???), really liked it. I don't know if I'd want it for dinner, but it makes a great lunch. I think I calculated that 2 servings (1/2 recipe, I think) is 6 pts. Lots of protein and fibre! And the strawberries are so delicious right now!

Is this different from the spinach and strawberry salad that is also in the May issue?

I made that this past weekend and even though I put in too much white wine vinegar (can't help it if I'm nearly blind and the 1/3 looked like 1/2 to me!), the dressing was delicious. I could have drank it straight!

It is a different recipe. The Chicken and Strawberries recipe is on page 112 of the May issue. I'm glad to hear you liked the Spinach and Strawberry Salad. My CL Supper Group is making it this weekend.

resurrecting this old thread since strawberry season is upon us...

I loved this salad! I posted my review on the "strawberries!" thread a couple days ago.

just want to add that I loved it even more the second day. The chicken and strawberries really seemed to benefit from sitting in the dressing overnight. (I kept the greens separate from the chicken and strawberries until the last minute.)

by the way...here is my original review:

I had this for lunch today and it was great. I have always been intrigued by the balsamic vinegar/strawberry combo, but I never have been brave enough to try it "straight up." This was a safe way for me to try it. (It was great in a salad, but I still wouldn't just eat a bowl of strawberries and balsamic vinegar.) I did a search and read a couple of reviews that suggested to double the dressing, so I did. I think it would have been fine, though, even had I not doubled it.


I think RunnerKim might be right...if you like a lot of dressing on your greens, you might want to double the dressing. But, for my taste, it wasn't necessary because I don't really like a large "dressing to salad" ratio.

thanks for bringing this thread up :) i never did try the salad but absolutely love the pie- i was like you had my doubts about the vinegar/strawberry combo. i love the pie and have made it several times. always adding more fresh strawberries on top. if it gets a bit warmer this week, i think i'll try this salad.

I'm so glad that this thread got resurrected. I was looking for something different to do with strawberries and I had forgotten all about this recipe. It's on the menu for Tuesday night!
