Here you go:
CookWare(tm) from Cooking Light(r)
Chicken Thighs With Garlic and Lime
SOURCE: Cooking Light YEAR: May 2001 PAGE: 126
INGREDIENTS FOR 2 SERVINGS:
1 tablespoon minced garlic
1-1/2 teaspoons ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons fresh lime juice, divided
4 (6-ounce) chicken thighs, skinned
3 tablespoons fat-free, less-sodium chicken broth
1 tablespoon white vinegar
2 teaspoons chopped fresh cilantro
2 lime wedges
INSTRUCTIONS:
After the chicken is baked, it's removed from the pan, and the drippings are
reduced on the stovetop to a slightly syrupy sauce that is then spooned over
the thighs.
1. Preheat oven to 350 degrees.
2. Combine first 5 ingredients in a small bowl; stir in 1 tablespoon juice.
Rub garlic mixture over chicken. Place chicken in a medium skillet.
3. Combine 1 tablespoon juice, chicken broth, and vinegar; pour over the
chicken. Place over medium-high heat; bring to a boil. Remove from heat. Wrap
handle of pan with foil. Cover and bake at 350 degrees for 30 minutes or until
a meat thermometer registers 180 degrees.
4. Remove chicken from pan; keep warm. Place pan over medium-high heat. Bring
to a boil, and cook until reduced to 1/4 cup (about 3 minutes). Spoon over
chicken. Sprinkle with cilantro, and serve with lime wedges. Yield: 2 servings
(serving size: 2 thighs and 2 tablespoons sauce).

Good Morning Grace!!! I see we are both lurking around the bulletin board this morning. Great minds!! Haven't seen many reviews from you lately... http://www.cookinglight.com/bbs/frown.gif Any other good recommendations? I am about caught up on my "Grace" file! http://www.cookinglight.com/bbs/biggrin.gif
Have a great day!

LOL Peggy!!
I was thinking the same thing when I saw your post, except that I was wondering what you're doing on the board so early! (I'm in Central time, so it's (9:20 for me!).
I know I haven't been putting up too many reviews - I haven't really made anything new that has knocked my socks off - I have been making oldies but goodies lately....
But YOU, on the other hand, have been keeping my printer VERY busy! Every time I see a review from you, I think, OH NO! Another one I have to try! http://www.cookinglight.com/bbs/biggrin.gif
I'm trying to get rid of the 10 pounds I packed on over the winter as well (due to too much sitting around reading the board and eating too many good CL recipes!), so I have been trying not to cook as much. My husband is also trying to lose the 20 he put on, and since he's a Professional Bowler, and the new season starts now, he's been working out like a fanatic and only wants "light" food (ie., salads, fish/veggies, etc.), so it doesn't look like I'll be "cooking" for a while!
But this weekend for Mother's Day it will be a cooking marathon, so I'll get my fix then.
I did make the Herbed Basmati Rice last night from this BB - it was out of this world. I made it with the Maple Glazed Salmon and some asparagus. But that recipe will become a permanent in my kitchen, I think!
Have a great day, and I'll keep filling up my Peggy folder!
