I got a recipe from eDiets.com this week for Tuna-Garbanzo Bean Salad. It is quite good -low in fat and calories and high in fiber. I am not much of a tuna fan but this uses white (not light) tuna, so it doesn't taste too fishy. If anyone is interested I will be happy to post the recipe. Gaye

Sorry it took me so long to post this. The day got away from me!
Garbanzo Bean, Tuna and Onion Salad with Lemon-Cream Dressing
1/4 cup plain nonfat yogurt
3 Tbsp. low-fat mayonnaise
1 1/2 Tbsp. Dijon mustard
1 tsp. grated lemon peel
1 6-oz. can solid white tuna in spring water, drained
2 Tbsp. fresh lemon juice
1 15 or 16-oz. can garbanzo beans (chickpeas), rinsed, drained
1 cup chopped sweet onion (such as Maui or Vidalia)
1 cup chopped celery
1 cup cherry tomatoes, halved
1/2 cup chopped fresh Italian parsley
Mix yogurt, mayonnaise, mustard and lemon peel in small bowl with whisk to blend. Coat tuna with lemon juice in large bowl by tossing. Mix in garbanzo beans, onion, celery, tomatoes, parsley and yogurt dressing to bowl. Toss to blend. Add salt and pepper to taste. (Can be prepared 6 hours ahead. Cover and chill.)
Makes 4 Servings. Nutritional values per serving: 201 calories; 4 g total fat; 0.5 g saturated fat; 16 mg cholesterol; 23 carbohydrate, 12 protein, 148 sodium.

Thanks for posting Gaye! This sounds like the perfect light lunch to bring to work. I'm printing it out as I'm typing although, with all the stacks of recipes around my computer, I certainly need to consider copying and pasting into Word!! Thank you very much for posting this Gaye. I have about 6 cans of tuna at home that I inherited and this looks like an excellent use for them!
