Hi- Recently someone mentioned this recipe on a thread I can't recall, and said it was from CL 3/93. I don't think I have that year's annual and I couldn't find the recipe in the Recipe Search. Would someone mind posting if you have it? It sounds good and I just got a huge bag of vidalia onions that I need ideas for. Thanks! Any other onion ideas would be appreciated!

Here's the recipe...haven't tried it myself. Let us know if it's great/terrible.

Also, the March 2000 issue had a recipe for Beer -Battered Onion Rings that might fit the bill. Never tried that recipe either, so I can't comment on the outcome.

Finally, I think there was a "vidalia onion recipe" thread last week...maybe something there will strike your fancy?

Grilled Sweet Onion Rings Dijon

Amount Measure Ingredient -- Preparation Method

3 tablespoons Dijon mustard
1 tablespoon lemon juice
1 1/2 teaspoons olive oil
1 teaspoon dried whole thyme
1 teaspoon lemon rind -- cut into 1-inch julienne-cut
2 medium sweet or purple onions -- (2 medium) cut into 1/4-inch-slices
Vegetable cooking spray

Combine first 5 ingredients in a small bowl; stir well. Brush one side of onion slices with half of mustard mixture.

Arrange onion slices, brushed sides down, in a wire grilling basket coated with cooking spray; place on grill rack over medium-hot coals. Cook 5 minutes. Baste top sides of onions with remaining mustard mixture; turn over, and cook 5 minutes.

Hi Anna -

Here's a great onion ring recipe for you to try. My boyfriend and I have had them a few times and we both love the flavor!

Baked Onion Rings

1 1/2 cups crushed cornflakes
2 teaspoons sugar
1 teaspoon paprika
1/4 teaspoon seasoned salt
1/4 teaspoon garlic salt
2 large sweet onions
egg substitute equivalent to 2 eggs

In a large bowl, combine the first five ingredients; set aside. Cut onions into 1/2 inch thick slices. Separate into rings, reserving the small rings for another use. In a small mixing bowl, beat egg substitute until frothy. Dip onion rings into egg, then into crumb mixture, coating well. Place in a single layer on baking sheets that have been coated with nonstick cooking spray. Bake at 375 for 15-20 minutes or until onions are tender and coating is crispy. Yield: about 6 servings. Nutritional Analysis: One serving (four onion rings) equals 143 calories, 1 gm fat, 442 mg sodium, trace cholesterol, 30 gm carbohydrates, 5 gm protein
