Well, guys -- thanks a bunch for all of your help. My Caribbean Island dinner went off quite well.

It began a bit nerve wracking, as I didn't anticipate that it would take me two hours! to fry up enough plantains for 4-5 people, but things ended up just swell.

The menu:

Plantain chips with habanero crab dip
Banana-pina-coladas

Fresh pineapple
Jerk chicken and shrimp kabobs
Veggie kabobs with citrus marinade
Jamaican red beans & rice

and for dessert...
Bananas foster cheesecake with rum sauce

My hubby brought home a CD of Caribbean music, and we danced and grilled and ate and talked until midnight. It was delightful.

YUM!!!!! Sounds like you throw an awesome party! I don't suppose you have all those recipes on MasterCook, which are easily downloadable?! (Is that even a word?!)Getting ready for 4th of July at the beach...banana pina coladas sound awesome too! I think I need to run out and get a battery operated blender!So glad you posted! Any suggestions for Mom's 60th birthday party? You sound like the Martha Stewart of Cooking Light!!!LOL
