A dear friend just got a smoker and is looking for recipes. I personally don't own one, so I'm not much help. Please share your favorite tried & trues. Unfornuately, this will probably only convince me that I need one. :rolleyes:

Beer Can Chicken is a great way to start out with the smoker. Smoked Chicken is wonderful!!

Recipe Summary

1 (4-pound) whole chicken
2 tablespoons vegetable oil
2 tablespoons salt
1 teaspoon black pepper
3 tablespoons of your favorite dry spice rub
1 can beer
Remove neck and giblets from chicken and discard. Rinse chicken inside and out, and pat dry with paper towels. Rub chicken lightly with oil then rub inside and out with salt, pepper and dry rub. Set aside.
Open beer can and take several gulps (make them big gulps so that the can is half full). Place beer can on a solid surface. Grabbing a chicken leg in each hand, plunk the bird cavity over the beer can. Transfer the bird-on-a-can to your grill and place in the center of the grate, balancing the bird on its 2 legs and the can like a tripod.
Cook the chicken over medium-high, indirect heat (i.e. no coals or burners on directly under the bird), with the grill cover on, for approximately 1 1/4 hours or until the internal temperature registers 165 degrees F in the breast area and 180 degrees F in the thigh, or until the thigh juice runs clear when stabbed with a sharp knife. Remove from grill and let rest for 10 minutes before carving.

I don't have a smoker but have done this on my grill. It was very, very good. I made it for our supper club and it was a hit. Then I made it again for out of town guests and they liked it also. The added benefit is that the turkey bones can be made into soup...I hope you enjoy it as much as we did.

Chili-Spiced Smoked Turkey Breast
You don't need a smoker; any covered grill will give the same effect. Simply place the turkey breast on the cool side of the grill and use soaked wood chips.
1/4 cup fresh lime juice
2 tablespoons olive oil
2 teaspoons unsweetened cocoa
2 teaspoons paprika
2 teaspoons brown sugar
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon chili powder
1 teaspoon dried thyme
2 garlic cloves, minced
1 (6-pound) whole turkey breast
2 cups mesquite chips
Cooking spray
Combine the first 10 ingredients in a small saucepan; bring to a boil. Remove from heat; cool. Combine lime juice mixture and turkey in a large zip-top plastic bag. Seal and marinate in refrigerator 2 hours. Soak wood chips in water at least 30 minutes. Drain well.
Preheat gas grill to medium-hot (350° to 400°) using both burners. Turn left burner off. Place wood chips in a disposable foil pan or a foil packet pierced with holes on grill over right burner. Remove turkey from marinade; discard marinade. Place turkey, skin side up, on grill rack coated with cooking spray over left burner. Cover and cook 1 1/2 hours. Turn turkey over; cook 15 minutes or until meat thermometer registers 170°. Remove turkey from grill. Cover loosely with foil, and let stand at least 10 minutes before carving. Discard skin.
Yield: 16 servings (serving size: 3 ounces)

misskitty100 ~ I'm a big fan of the beer-can chicken! I make it on the grill all the time. I didn't even think about using a smoker for it.
Pam Campbell ~ the turkey recipe sounds delicious!! Even if she doesn't try it, I know I will.

Beer can chicken is wonderful! We've done it on a gas grill, a weber charcoal and a smoker, you can't go wrong, a good way to start out!
