We had this last nite with the Polenta and tomatoes from the same issue (will post in another thread) and it was delicious. Very easy and quick to put together. I cut up the chicken in the morning and then about 30 minutes before dinner I made up the marinade. The mint sauce was also simple...just throw everything into the food processor. It tasted alot like Indian mint chutney. It called for 1/2 cup of water...I put a little more than a quarter cup and next time I will reduce it a little more. I think I would have liked it a little thicker. I could see tossing the chicken in a pita with some yogurt sauce and the mint sauce. It could go the Middle Eastern route with the mint and the lemon. Anyhow, definitely a repeater...simple and fast, perfect for a weeknight dinner.
