Tried the "back to the best" barbecued roast salmon this weekend. Although it was tasty, my family greatly preferred the salmon with coriander, pepper and sesame seeds, cooked in nectar (I think it was in the April or May issue).

We tried this salmon recipe last night & weren't thrilled either. It was OK, but we thought that it was too sweet and too much spice that covered up the flavor of the salmon. I think that the pineapple/lemon juice would be a good marinade for salmon that is then grilled and I will try that sometime.

I am a salmon lover. A few months ago I prepared it by baking it on a red cedar plank. I will never prepare it any other way!!!
I marinated the salmon for an hour or more in : 1/4 cup Pure maple syrup, few tbl soy sauce,lemon juice,dijon and minced garlic clove. Now...the best part:
I soaked the red cedar plank in the sink for a few hours, pre-heated the oven to 325(no higher),
lightly oiled the plank and baked it for 15 min. Place the salmon on the plank and bake for 25 min. The cedar imparts a very delicate pleasant flavor along with the marinade. I recently made it for my mother-in law and she thought it was the best she tasted. A must try-you cant' go wrong!

DH and I just returned from Costco with 10 lbs of salmon fillet- I could eat it breakfast, lunch, dinner!
Your cooking method sounds amazing! Where did you find the red cedar plank? Do you need to treat it?

Actually, I went to a local lumber yard and had them cut me a 3/4in board of untreated red cedar. I just washed it well..soaked it well and now I have my new found cooking utencil. I have even cooked marinated chicken breasts on it..but salmon is just the tastiest.

So the plank is 3/4" thick but what about the other demensions W X L ? This just sounds really great so I would like to try it but at least have aplank big enough to cook for 4. Any suggestions?

The board that I have is 9"X 17". The lumber yard will cut it to any length. Check the dimensions of your sink as you will have to soak it easily.
These boards can be ordered online for $50.00. O.K, they're nice but thats outrageous for piece of wood!!

Bismone - this sounds so interesting - and have heard much about it - how many uses do you think one would get out of one piece? Can this also be put on the barbeque?

I had 2 pieces cut as I thought that they would have limited use. I have been using the same plank-prepared salmon on it 6 or more times and it is seasoned looking but still good.
However I did make a big mistake a few weeks ago!!!I cooked another type of fish (catfish)on the plank and the oven temp called for 450. Well being so comfortable with my "Plank Pal" I said what the heck. I may as well should have brought the gas grill in the kitchen. There was so much smoke in my kitchen and my board became more seasoned but not burned. It was a disaster and the catfish was horrible!! Live and learn.
