I think I've decided on Avocado & Bacon sandwiches, and Garlic Chili Shrimp with extra bread for mopping up the sauce. Was trying to keep it light and simple since it's TOO HOT to be heating up the kitchen. Still undecided about dessert - might be Mock Mexican Fried Ice Cream ...

Tonight is Cog Au Vin from The River Roads Cookbook (think YaYa of the Sisterhood) with curried rice, grilled asparagus and the peach cobbler in August's Gourmet (I think it's Gourmet but then it could be BA...it's downstairs...it's the one where you bake the peaches for awhile without the crumble).
DH requested some type of sausage and pasta dish, so I'm making Orecchiette with Sausage, Peppers, and Feta. We haven't had it in a while and really enjoyed it before. I want wine, but I think we have to make a run to Home Depot later and those two don't mix :rolleyes:.

Filet Mignon -- just seasoned and made on the grill
Vegetable Barley Risotto -- a recipe I found online and picked it just because I have some barley and it uses zucchini, which I have in large supply from the garden
Green beans -- not sure how I'll make them, but my husband went nuts on buying a huge quantity at the farmer's market
CL Blueberry Pound Cake -- that I made with a mixture of blueberries and raspberries

I'm thawing some Semolina Pizza Dough and I'll top it with either the toppings from Garden Eggplant Pizza from Southern Living a few issues back or the Turkish Turkey Pizza from this month's CL - whichever one DH chooses. Regardless, I'm going to serve it with the Cucumber-Tomato Salad with Mint that CL recommended serving with the Turkey Pizza.

Lemon-Garlic Chicken Thighs (CL 8/02). Don't know yet what I'll serve with them. Probably just a green salad. Got to keep it light for awhile, since, eeeeek, the scale is climbing. :(

DH's in charge of dinner on Fridays, since he gets out early during the summer.
I'm going to take a wild guess that we're having takeout.
Why doesn't anyone post this question on a night I'm making something fabulous?? ;)

Summer Minestrone, some kinda quick bread, salad, and leftover desserts--Lemon Buttermilk Pie, Blueberry Crumbcake & Indian-spiced Rice Pudding w/raisins. Yes, I AM HAVING COMPANY.

Friday nights are usually no-cook nights for us, although with it being so hot lately, that seems to be the norm during the week as well rather than the exception! I'm a much more active cook in fall/winter.
Tonight it will be either indian or thai for us.

I've got some chicken thighs marinating in a combo of light italian dressing, garlic, balsamic & worchestershire sauce. I figure I'll grill them on the GF. I'm serving this with gaboladin (italian caponata), and probably a bit of WW pasta on the side.

We're having big honking sized shrimp made some way. I spied a dish out of Fresh Every Day that has spinach in it and I just happen to have some in the fridge. Add to that the Parmesan Zucchini in the latest EW and probably some garlic sourdough bread.
Plus wine! :)

We got invited to the neighbors for a cookout - yeah!
I'm bringing an Edible Arrangements fruit basket I received yesterday, as well as some homemade pizza, cut in small squares, for appetizers. And a very cute box of wine I picked up the other day. Never had the boxed wine before, but it's made by Kendall Jackson and soooo cute i had to buy it. Cheers! :)

EW Pulled Pork (J/J 05) and MSL "Baked" Beans (8/05) (done on top of the stove). Since each of these took 5 plus hours of cooking/baking :eek: they probably were not the smartest choices for this extremely hot day. But the house smells really good. Along with we'll have coleslaw, fresh Jersey corn and CI Blueberry Buckle.

Who knows! We thought we were going out for sushi with some friends, but they wanted to do it next week instead, so now I have to come up with something. Maybe grilled shrimp and fresh sweet corn. We'll see what looks good to me when I get home. :)

We are finally having some gorgeous weather here, so we're going to celebrate by going out! :D

It's Friday, which means happy hour and no cooking!
Going to a hotspot in Scottsdale called 'Devil's Martini'. 2 for 1 drinks and 1/2 price appy's, can't beat that! ;)

After a busy day, and still having loads of zucchini and yellow squash on hand, I made a very easy, but very tasty Easy Italian Vegetable Pasta Bake from www.3aday.org. A few small changes based on preference and also what I had around, but really hit the spot for me tonight, and leftovers will be nice this weekend. :)

Another pasta and sausage dish out my way! I'm making the Pasta Rustica from one of the Williams-Sonoma cookbooks. I picked it up on the BB about 2 years ago and it's become a standby.

Steamed Basmati Rice with Spicy Baked Chicken , plain yogurt , corn on the cob , and Garden Salad . Maybe some ice cream for dessert. My mom and brother are suddenly coming for dinner, so I added the corn on the cob in case the rice runs a little short. :o The kids will be very happy! I am starving already....

We are having sauteed scallops, yellow squash and onions and vine tomatoes with fresh basil, olive oil and balsamic vinegar.
Quick and easy dinner!
It was nothing exciting as we were craving spaghetti with meat sauce. Straightforward and already cleaned up from. :D

Whole wheat fettuccine with sauteed zucchini, tuna, tomato, and capers. On the side: steamed broccoli, red pepper strips (raw). Dessert: watermelon. Yum. I'm so full, I can hardly move. :p
