We're going on a car camping excursion to the beach soon. I'd like to make more creative (and healthy) meals than the usual hot dogs/hamburgers. Any suggestions?
Keep in mind my equipment will be a charcoal grill and a two burner propane stove. We will have access to a large grocery store.

This is pretty basic, but I LOVE baked potatoes made in the campfire. Just wash them before you leave then poke with holes, cover with aluminium foil and shove down in the hot coals. Also, when you put out your fire, put a few potatoes in the hot coals overnight and have yummy warm potatoes for breakfast!!
Beer bread can also be great on a skillet over the campfire- and it's a great reason to bring some beer along!!! HAVE FUN!

One of my favorite 'camping' foods is roasted corn on the cob. We sprinkle ears of corn with chili powder or ground chipotle, assorted herbs and a touch of salt, and drizzle a little butter on them. Wrap in foil and put over the indirect heat area of the BBQ. DH likes to stuff the foil-covered ears down into the coals, but I like the indirect heat way better!

My husband and I have spent a good bit of time camping during the last few years, so I have a few suggestions.
For dessert, I love bananas, with marshmallows and chocolate. I split a banana, put small marshmallows and chocolate in the crease and wrap in foil. Place on campfire grill for a few minutes.
I also make a lot of foil wrapped things. I think I got some recipes off of renolyds wrap web site. I really like a dish of pork chops, cumin, barbeque sauce, chili powder, and peppers wrapped up in foil and grilled for about 20 minutes.
I also would suggest freezing anything that you would bring if going for several days. I do this and keep a separate cooler for food from drinks.
Have a great time at the beach Susan. Kabobs are a great healthy substitute for hotdogs if you can have an open fire - the charcoal grill works too, just not quite as 'campy'. If using the open fire method just spear the ingredients on the same type of stick you would use for hotdogs. You can wrap the cooked kabobs in pita bread, hoagie rolls, or tortillas. A quick, easy dessert is to melt a little carmel, cut up firm fruit, and dip into the carmel - yum!

Instead of the "usual" camping foods, grill a portabella mushroom with a slice of provolone cheese and then put it on a bun with leaf lettuce, alfalfa sprouts, tomatoes and whatever else you can think of. Since you'll also have a burner, cous cous is an easy pasta to prepare and then maybe grill some veggies then chop them up and mix them with the cous cous and some fresh herbs. There's really not a whole lot that you can't make when you're camping...look at it as an adventure! http://www.cookinglight.com/bbs/smile.gif
