As I said, I love Jewel's recipe for garlicky green beans. I'm searching for more to die for vegetable recipes so I can take advantage of all the fresh goodies. So, what are your to die for summer veggie recipes???

Tomato Halves in Garlic Cream

Amount Measure Ingredient -- Preparation Method

2 large tomatoes
1 tbsp butter
1 clove garlic -- halved
2 tbsps cream
1 tbsp minced basil
Salt - to taste
Freshly ground pepper – to taste
Cut the tomatoes in half horizontally. In a skillet, melt the butter, add garlic, and sauté. Place the tomato halves cut side down and cook for 2 to 3 minutes, until tender but still holding their shape. Gently press the tomatoes to release a little juice. With a slotted spoon, transfer the tomatoes to a heated serving dish and keep warm. Remove the garlic from the pan and add the cream, basil, salt and pepper. Cook until slightly thickened, about 5 minutes. Pour over the tomatoes and serve.

NOTES : my notes: This was described as elegant and easy and those words couldn't be more true. But the best part is the taste!! It tastes decadently good. When you initially cook the tomatoes in the pan, they give off some juices, so when you add the cream and the basil, the sauce becomes a lovely pinkish/orange color. And the taste is fabulous. Wow.

thanks for the tomato recipe-I'll try it tonight. Anyone have a wonderful zucchini recipe???

Thanks for the tomato recipe, it sounds great, and my printer is churning away.
Shoezoo - this is pretty simple but we love zuchinni sauted in a bit of olive oil and lightly dusted with parmesian. I am going to try roasting them with olive oil and parm and also want to try the chips that have been discussed a lot lately.

Not fancy, but tasty: we slice zucchini into planks, brush with EVOO and sprinkle with herb mix of choice, S&P and grill. In fact, this is the only way DH will eat zucchini as he doesn't like it just steamed with lemon and dill.
