Bought a 20 lb bag of chili peppers today and had them roasted at the store. How should these be stored for use (fridge or not)? Also any fun recipes would be great! Thanks :p

I freeze mine individually on cookie sheets (so they wont clump together) then put them in plastic zip-top bags

I store mine the same way Terry stores hers.
As for using them, one of my favorite (and easy) summer recipes is for chile soft tacos. For each soft taco, heat a flour tortilla (white, or whole wheat) over medium heat in a cast iron skillet. Warm one side of the tortilla, flip the tortilla and sprinkle goat cheese on the warm-sided tortilla, add some fresh herbs and some roasted chile peppers, fold over, remove from the pan and eat.

I also freeze mine. They tend to mold quickly in the fridge.
