View Full Version : ISO Argentinian cookbook or recipes?

We were lucky enough to be invited last night to our Concordia Language villages staff dinner at the spanish camp. A friend of ours is the dean and wanted us to experience argentinian grilling. They have a huge outdoor grill and fire. They take the ash from the very hot fire and put it under the grill. They grilled 6 different meats-beef, pork , chorizo, boneless chicken, whole chicken and ribs. They served them with 3 different salads, chimichurri and roasted red peppers marinated in olive oil, peppercorns, sliced garlic and bay leaves. It was all wonderful. Can anyone share any recipes or cookbook ideas to learn more about this cuisine?

My mother is Argentine, so I have some first-hand experience with the cuisine, so feel free to PM me with questions. Much of what I cook that's "Argentine" doesn't have a specific recipe; I've just learned over the years.

My nanny is from Argentina. We talk a bit about cooking as I love to cook and her husband is a pastry chef. She does not like to cook that much, but what I have learned is typical is Milinesa (spelling?) and also, she makes a lot of "tortas" which appear to be quite quiche-like. I could ask her for some recipes if you like.

In The Barbecue Bible , Steven Raichlen does include some Argentinian recipes (and the whole book is fun to read).
