I was at Kroger's in Ft. Wayne and was checking out their health food section. I was THRILLED to find brown basmati rice, a large bag of flax seeds, and something I had completely forgotten about - Lundberg Wehani Brown Rice. I LOVE this stuff and I think we used to get it at Whole Foods in Austin, TX. It's a brown rice with the bran and germ layers intact - it's nutty and delicious.

Anyway, any ideas on how to put the flax seed to good use? Will it go rancid? I know CL has had a few recipes...I'll have to check them out...

Yes, the flax seed does need to be kept in the frig as it will go rancid quickly(according to what I've read). BTW, I have also read that the best way to get the benefit from it, it needs to be ground. As for recipes---hummmm--there was the recipe for a bread using it in CL not too long ago. I've also read that some people just sprinkle it on cereal, etc. Sorry I can't be of more help--.

Finding Flax seeds makes you happy- ah the simple things in life!!
I store flax seeds in the freezer - and I also read that they are better for you when ground up. Don't have any recipes near by at the moment but will try and post some soon.
You should have seen in in TJ for the first time a couple of weeks ago ( I live in Canada), I was running around like an idiot- you would of thought I was from Russia or somewhere and never seen fresh food before. My husband thought it was hilarious but then he got the spirit and kept coming up to me with things he wanted to buy! It was so much fun. Of course I spent to much- with the dollar exchange things are expensive for us. It was better that a trip to Disneyland!!

Hi Lindrusso!

You don't have to refrigerate the whole seeds -- they're fine if they're just in the pantry. Once you grind the seeds, though, THEN they become rancid quickly and should be refrigerated or frozen. I just grind a tablespoon each morning in a teeny little $10 coffee grinder I got at KMart.

If you don't grind them, then they act like fiber and go out just like they came in http://www.cookinglight.com/bbs/smile.gif You won't get all the omega-3 benefits from them if they're not ground.

Ground flaxseed is very high in fat, though -- yes, I KNOW it's the good fat, but it's still fat. I cut down from 2T to 1T recently and lost 3# in 3 weeks. Just be careful to figure it into your daily fat allotment.

I sprinkle it over my oatmeal or cream of wheat in the morning and it's yummy. I've also put it in PB&J sandwiches between the PB and J, in bread dough, cookies -- anything that calls for flour, I replace a little bit with ground flaxseed. There's a great CL recipe for Molasses Carackle Cookies that has flaxseed in it, and I've seen quite a few bread recipes with it.

Thanks so much for the very important information on the flax seeds! I would have just been, um, eliminating them http://www.cookinglight.com/bbs/wink.gif without getting any benefits! I will definitely check out that website and what a great idea putting it into baked goods!

And Kima - If I had a Trader Joe's near me, I'd be doing the exact same thing on my first visit! I know I'd love it, but there aren't any around here.... http://www.cookinglight.com/bbs/frown.gif ....
