Yes, yes, I know it's made from veal and I know they do terrible things to calves, but I can never resist this mild sausage whenever I can find it. As it happens, I went to a German smokehouse, a paradise of fatty foods, especially sausages of all kinds, in Saugerties, NY, and had a sausage buying spree.
I've never cooked these before...and I'm assuming they need cooking because they're not smoked...so last night I just simmered them in beer and had them with braised red cabbage and apples.
I'm looking for other ideas, though, and ways I can cook them as well. Can I pan brown them with a bit of water like kielbasa, or are they too delicate for other methods? Any serving suggestions would be appreciated, because I'm not sure what works!
