My Dad's birthday is next week and the three things he loves the most are carrot cake, coconut, and ice cream. So I am going to make the carrot cake from CL earlier this year and want to make coconut ice cream for him. Anybody have a good recipe? I searched....but we all know how that is going lately.

This one is excellent---you didn't specify light, and clearly this one is not. I'm sure I pulled it off Gail's Swap, but where it came from originally I no longer remember.
COCONUT CUSTARD ICE CREAM
4 large egg yolks
¾ cup superfine sugar (see note)
1 cup half & half
½ cup cream of coconut, such as Coco Lopez (NOT coconut milk)
2 cup whipping cream, well-chilled
dash of salt
¼ cup sweetened shredded coconut
In a metal bowl, with an electric hand mixer, beat the egg yolks, sugar, half-and-half and vanilla. Set the bowl over a pan of hot water and place on medium heat until water comes to a boil. Beat the mixture until it is thickened and about double its original volume, about 10 minutes. Beat in the coconut cream. Place the bowl in a tray of ice cubes and continue beating until the mixture is cold. Add the whipping cream and salt, and beat the mixture well. (I usually chill overnight at this point) Fold in the coconut. Transfer the mixture to your ice cream machine, and freeze according to the manufacturer's instructions.
Note: If you can't find superfine sugar, process granulated sugar in blender until very fine.

I can vouch for that coconut custard ice cream. I made that recipe about a month ago and it was just heavenly! :D
