View Full Version : Oil and Vinegar Coleslaw?

Growing up in the Chicago Area, one of the grocery stores (I think Dominicks) used to sell an 'old fashioned slaw' that was with an oil and vinegar dressing.
I got my produce delivery yesterday and it has a head of cabbage and a bunch of carrots. Any body have a recipe for this type of slaw?

I don't really have a recipe, it's one of those things I just make to taste.
Shredded cabbage, shredded carrots, chopped green onions, sprinkle of celery seed, chopped parsley, glop of vegetable oil ( I use corn oil), smaller glop of vinegar, salt and pepper. I like to add a teaspoon of dijon mustard and a teaspoon of horseradish, but I don't imagine either would appeal to everyone.

I've made this quite a few times now. It's from Rick Bayless's Rick and Lanie's Excellent Kitchen Adventures. His parents owned a barbecue restaurant in Oklahoma when he was growing up, and this is based on one of the cole slaws they served there.
Hickory House Sour Slaw
Vinaigrette:
1/4 cup vegetable oil
1/4 cup distilled white vinegar
1 tablespoon dry sherry
1 tablespoon sugar
2 small garlic cloves, chopped
salt (it says "a generous teaspoon.")
2 tablespoons water
1/2 head green cabbage, about 1 1/2 pounds needed
1/4 cup chopped parsley
Core cabbage and slice as thinly as possible.
Combine vinaigrette ingredients and process in blender or food processor until smooth.
Place sliced cabbage in bowl and sprinkle with parsley. Drizzle on the vinaigrette, and toss to coat.
Cover bowl and refrigerate at least one hour before serving.

This is the way I make my ColeSlaw. This is the way we ate it in Germany We could never stand the coleslaw that others made with mayonaise.

1 Medium Green Cabbage (firm) -- Shredded
1 Medium Carrot -- Shredded
1 Small Green Onion -- Sliced
1/2 Green Pepper -- Diced
3 Tablespoons Canola Oil
6 Tablespoons White Vinegar
Salt and Pepper -- Freshly Ground
Shred the cabbage and vegetables, place in salad bowl.
Add all other ingredients. Mix thoroughly. Cover and refrigerate for several hours for flavors to blend.

I made this one for my son's graduation party, it was great!
Carolina Slaw
This coleslaw is made with a tangy vinegar dressing, with sugar, cider vinegar, celery seed, and other seasonings.
1 large head of cabbage, finely shredded
1 medium bell pepper, finely chopped
1 medium sweet onions, finely chopped
2 carrots, grated
Dressing:
1 cup sugar
1 teaspoon salt
2/3 cup vegetable oil
1 teaspoon dry mustard
1 teaspoon celery seed
1 cup cider vinegar
Combine coleslaw vegetable ingredients; chopped cabbage, chopped bell pepper, chopped onions, and grated carrots in a large serving bowl.
In a saucepan over medium heat, combine remaining ingredients; bring to a boil. Simmer, stirring, until sugar is dissolved; pour over vegetables and toss well. Cover and refrigerate until thoroughly chilled.
Enough slaw for 8 to 10 servings. Delicious with pulled pork!

Thanks, I think I'm going to try Curleytop's recipe. I know it had carrots as well which is why I'm picking it as my starting point :D
