Aluminum foil. When heating stuff in the oven, which side do I leave for the outer cover? I look at it and probably make it out more difficult than it is, then I think too much and make reasons for both sides-UGH!! Also, does anyone know of a good Greek Cookbook to recommend? Its getting warmer now although you wouldnt know it(Its a little muggy and somewhat tropical in Southern CA) and Greek food sounds better when its warmer. Thanks for your replies

I remember reading somewhere that it doesn't really matter which side is in and which side is out when you're cooking with foil. The reason one side is shiny and the other is not has to do with the way it's made. Don't fret about it -- it cooks the same either way!!! http://www.cookinglight.com/bbs/smile.gif

I always thought the shiny side would attract the heat better.

No, it really doesn't matter but when you think about a reflective surface it makes sense that something shiney would reflect the heat. Doesn't it?

I believe Martha said that the reason one side is shiny and the other is not is because the roller that is used to press the foil causes one side to be shiny. So there's no difference in either side.
