I just found out I'm in charge of making MIL's birthday cake for dinner...in 4 hours. :eek: :mad: Is there a VERY quick cake that I could easily whip up? She abhors boxed cake mixes so I definitely can't just make one of those. Thank you!!

The CL Texas Sheet Cake (http://food.cookinglight.com/cooking/display/recipefinder.dyn?action=displayRecipe&recipe_id=577276) is easy to make and could look very birthday cake-y. Tastes great, too!

Preacher's Chocolate Cake

Amount Measure Ingredient -- Preparation Method

1 c brown sugar
1 c sugar
1/2 c shortening
2 eggs -- beaten
2 c flour
1/2 tsp salt
2 tsps soda
1/2 c cocoa
1/2 c buttermilk
1 c boiling water
1 tsp vanilla
Buttercream Frosting:
1 lb powdered sugar
1/2 c butter -- softened
1 tsp vanilla
3 tbsps cream -- (2- 3 tbsp)
Cream sugars and shortening; add eggs and beat very well. Add dry ingredients alternatelly with milk, beating well after each addition. Fold in boiling water and vanilla.
Pour in a greased 13x9 pan and bake 30-35 minutes in a preheated 350 oven. (can also be baked in 2 9-inch round pans for 25-30 minutes)
Cool cake for 20 minutes. Invert onto serving platter. Cool cake completely. Frost with buttercream frosting.

NOTES : This has been my family's traditional birthday cake for as long as I can remember. In fact, my mom has been making it since before I was born. It is still the best chocolate cake I have ever tasted. I am biased of course, though. It is so easy to put together and it isn't all that high in fat. We frost it with a simple frosting, but you can use whatever frosting you like best. I will include the frosting recipe here, just to be complete. The frosting is very rich and sweet. We tint it different colors. The cake will be one color and then we save a little frosting and tint it another color to pipe on the words "Happy Birthday."
butter can be substituted for shortening, if desired. milk can be substituted for cream in the frosting.

Preacher's Chocolate Cake
This is my go-to cake now for your basic chocolate cake. I made it for my dbf's birthday earlier this year and declared it the standard from now on. It went immediately into my favorites folder in Mastercook (which should also have a subfolder of Val and Anna's baked goods, as well as pilgrim719's muffins!) :D Needless to say, I highly recommend it!
