Hi, all

Made a wonderful dinner recently that I wanted to share with you.

I made the barbecued salmon (Back to the Best from 05/01) which was easy and delicious. I am a big salmon fan and this was one of the best presentations ever.

But the best part was that (for once!), I served the perfect side dishes. I steamed some asparagus which I placed on the outer edge of the plate. Next to that I placed a watercress/endive/apple salad with dijon vinagrette. (Recipe from Chez Panisse cookbook by way of the most recent issue of Health magazine.).

And, as soon as the salmon was done, I placed it right next to the salmon. Warm salmon with spices blended perfectly with the vinagrette and greens which also complemented the asparagus.

One of my cooking woes is putting together good menus. And this was the best ever! Plus, I thought it was pretty easy to assemble.

Hubby is long-time salad-hater and even he liked the combo! Will definitely serve again to DH and company.
