This recipe is from CL Complete. Overall, I enjoyed it very much, though DH can't say the same. He likes simple food, and this was a little too gourmet for him. That and he doesn't care for beets.

I thought it was a nice blend of flavors and textures. Sweet, tangy, crunchy. Nice presentation with the contasting colors.

It was very time consuming. The recipe says it takes an hour, but I used pre-cooked beets (from TJ) and it still took at least 50 minutes. Oh well, I had the ingredients on hand and it was a nice alternative to my standard grilled asparagus. I probably won't repeat it - but I rarely repeat recipes.

I don't have the recipe handy. Maybe someone else can post it or I can post it tonight if anyone wants it.
