I had weekend company that ate none of the bananas I bought for breakfast. Banana bread is the obvious answer, but I am looking for something else to make. Help!

Seriously, the easiest solution might be to freeze them -- frozen bananas are an awesome, creamy, desserty snack to have on hand. You could also make banana pudding, smoothies, banana milkshakes, yum...

I haven't tried this one, but it looks good, is a little bit different, and uses 4 bananas! Let me know how it is if you end up trying it...

Roasted Bananas With Brown Sugar-Walnut Glaze

INGREDIENTS FOR 6 SERVINGS:
1/3 cup packed brown sugar
1/4 cup fresh lemon juice
2 tablespoons reduced-calorie margarine, melted
1/4 teaspoon ground cinnamon
4 large firm ripe bananas (about 1-1/2 pounds)
Cooking spray
1/4 cup chopped walnuts, toasted
1-1/2 cups vanilla low-fat frozen yogurt
INSTRUCTIONS:
1. Preheat oven to 450 degrees.
2. Combine first 4 ingredients in a bowl, and set aside.
3. Cut bananas in half lengthwise. Place banana halves, cut sides up, on a
jelly-roll pan coated with cooking spray. Bake at 450 degrees for 4 minutes.
Drizzle sugar mixture evenly over banana halves, and sprinkle with toasted
walnuts. Bake an additional 3 minutes. Cut each banana piece into thirds
crosswise. Serve bananas with frozen yogurt; drizzle with any remaining sugar
mixture. Yield: 6 servings (serving size: 4 banana pieces and 1/4 cup frozen
yogurt).
NUTRITIONAL INFORMATION:
CALORIES 237 (27% from fat); FAT 7g (sat 1.5g, mono 1.7g, poly 3.1g); PROTEIN
3.9g; CARB 44.5g; FIBER 3.7g; CHOL 5mg; IRON 0.7mg; SODIUM 58mg; CALC 66mg
Oh yeah, and freezing them is a great idea too - I keep a couple on hand in my freezer for when I want to make a smoothie, or for when a recipe calls for bananas. They're not something I buy every week, so it's unlikely I'll have a fresh one on hand, and I like to have every ingredient I possibly can, "on hand", for when I get the itch to cook something! http://www.cookinglight.com/bbs/biggrin.gif

I would put them in the freezer in a zip lock bag. When you want to use them for muffins, cakes or smoothies you will have them

Grace! This recipe has been sitting in my "to make" file since the issue came out in 1997. I'd forgotten about it until I saw your posting- it just made me laugh. Thanks for posting this!

We just made banana ice cream with ours this weekend! Yummy over a brownie. (not light though)

I peel and freeze overripe bananas individually. When my sweet tooth strikes, I pull one out, cut it into chunks, nuke it 10 seconds and put it in a big cup. I add a cup of skim milk and a dash of vanilla extract, and sometimes a packet of Equal. Then I whip it up with my hand blender. It makes a great, thick banana shake, with no ice cream!

My dd LOVES banana popsicles! I just mash my overly ripe bananas and pop them into my handy-dandy tuperware popsicle molds. She thinks it is an extra special treat to have a popsicle for breakfast! http://www.cookinglight.com/bbs/biggrin.gif
