I'm having a menu planning problem. A friend is coming to stay for 2 nights with his new significant other and her 8 and 14 year old sons. The woman is a vegetarian and the 8 year old is a super fussy eater. I need some ideas for one dinner and one lunch. I figure breakfast will be cereal, fruit, homemade bread... and dessert is the easy part. Any ideas?

How about some pasta with seafood for dinner. If her son doesn't like fish, just make him a separate plate with just the sauce??? I'll keep thinking about this one!

How about Giada's Lemon Spaghetti? Very simple to make and most kids like spaghetti.
Another suggestion, if you're looking to impress, would be her Lasagna Rolls. Looks really, really nice in the dish and satisfies a vegetarian easily.

What about a taco/fajita bar for lunch? You could have shredded chicken or ground beef for the fussy eater, and veggie refried or black beans for the mom. Everyone could make thier own, so could pick and choose what they liked. Serve with some white or spanish-style rice.
How about homemade macaroni and cheese? You could "dress up" the meal a little with a nice salad, olives, broiled stuffed tomatoes or roasted veggie, etc. My 10 year old nephew is an extrememly picky eater (though his five year old brother isn't :rolleyes: ) so when serving them, I always make sure that there is something my older nephew will eat and then make the other dishes interesting for everyone else.
