Does anyone have the recipe for Blue Cheese & Parsley Mashed Potatoes? I've searched tha archives - only to find reviews, no recipes. I love this recipe & want to make it tonight - & I think my DH tossed the magazine with it in it.

Here it is for you :

Mashed Potatoes with Blue Cheese and Parsley (Jan/Feb 01)

2 pounds red potaoes, cut into 2-inch chunks
2 garlic cloves, peeled
1 cup (4 ounces) crumbled blue cheese
1/2 cup 1% low-fat milk
2 tbs chopped fresh parsley
1/4 tsp freshly ground black pepper

1. Place potatoes and garlic in large saucepan, cover with water. Bring to a boil, cook 15 minutes or until tender. Drain. Place potato mixture and remaining ingredients in a large bowl. Mash to desired consistency. Yield: 4 servings (serving size 1 cup)
