View Full Version : ISO Pine nut cookie recipe

I need to make something Mexican for my 3rd grader's Spanish class and the cheese/bean/chip category is pretty full. I don't like those Mexican wedding cookies, and was hoping for a pine nut cookie recipe. I have seen them in bakeries. I looked at the Food TV site someone mentioned, and there's a choc. recipe but I thinking of a plain cookie. Any ideas for me?

I believe pignoli cookies are Italian in origin. Heres a recipe
Pignoli Cookies
1lb. almond paste
2 cups sugar
4 egg whites, slightly beaten
2 to 3 oz. pine nuts (pignoli)
preheat oven 350 degrees. Lightly greese baking sheets
Cook 15-20 min.
Makes 6 dozen
Cream almond paste, sugar, and egg whites together. Drop by rounded teaspoons onto baking sheet, 1 inch apart. Sprinkle with 6 to 8 pine nuts, and bake until lightly browned

POLVORONES DE CANELA (cinnamon cookies)
Ingredients
1 1/8 cups butter
1/2 cup confectioners' sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 cup confectioners' sugar
1 teaspoon ground cinnamon
1 Cream 1/2 cup + 1 teaspoon confectioners' sugar and butter or margarine together. Add 1/2 teaspoon cinnamon, salt, and vanilla. Stir in the flour, making a stiff dough.
2 Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
3 Shape dough into 1 inch balls. Mix together 1 cup confectioners' sugar and 1 teaspoon cinnamon; roll balls in cinnamon mixture.
4 Bake for 15 to 20 minutes, until nicely browned. Cool cookies on wire racks
