Also in the issue that I have misplaced (March, April or May) was a recipe for tofu coleslaw that I would love to have. Again, I can't seem to find it on the web. Are all Cooking Light recipes not on the web??? If someone could post the tofu coleslaw recipe for me that would be great. I want to bring it to a Fourth of July barbaque!

I made the cole slaw a while back, and thought it was awful. I hate to be so harsh, because I know that real people come up with these recipes; but, in my opinion, it was not worth trying.

Here's the recipe from May 2000 issue:
Tofu Coleslaw
Firm tofu forms the creamy base of the coleslaw dressing.
4 cups thinly sliced green cabbage
3/4 cup grated carrot
3/4 cup finely diced celery
1 cup reduced-fat firm tofu, drained (about 6 ounces)
1/4 cup low-fat mayonnaise
4 teaspoons rice vinegar
2 teaspoons prepared mustard
1 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon ground red pepper
2 garlic cloves
1/4 cup chopped fresh parsley
1. Combine cabbage, caroot, and celery in a large bowl.
2. Combine tofu and next 7 ingredients (tofu through garlic) in a blender or food processor; process until smooth, scraping sides of bowl occasionally. Add parsley, pulsing once. Pour over the cabbage mixture, tossing to coat. Cover and chill.
Yield: 8 servings (serving size: 1/2 cup).
CALORIES 42; FAT 0.9g; PROTEIN 2.4g; CARB 6.6g; FIBER 1.5g; CHOL 0mg; IRON 0.6mg; SODIUM 275 mg; CALC 38mg

I think that I have that one...I will check tonite when I get home...was it in the mag. that had an entire chapter devoted to tofu?

Cartert, you may want to try it out yourself first. I tried it and was not impressed at all.

Can anyone who has made it and thinks it was terrible tell me why so I know whether or not I really want to make it or not. Was it a bad texture? Did it not taste like coleslaw? Let me know,

Did anyone /like/ this salad? There's got to be something one could do to make it more flavorful (if that's the problem).

Agreed, I really want to make it...any suggestions of how to improve it from people who have tried it.
Also, on a different topic does anyone know the what it means to be a junior member vs a member (the mysterious titles that appear below our screen names)?

I think "member" status has something to do with the number of postings one has submitted. There was discussion earlier that supposed that 50 posts were required to obtain "member"...
