I recently bought some Greek seasoning from Penzey's and I love it! Are there any recipes out there that specifically call for Greek seasoning? They don't have to be light.

Crunchy Catfish
Catfish fillets
1 cup cracker crumbs (I just use the low fat Club Crackers)
1T Greek Seasoning
1/4 cup parmesean cheese
1T water
1 egg
1t unsalted butter
Combine cracker crumbs, greek seasoning, and cheese. In another bowl mix egg and water. Dip catfish fillets in egg mixture and then in the cracker mixture. Put in baking pan and drizzle with butter. Bake 375-400 for 25-30 minutes.
I hope I remembered everything correctly. I don't always use the butter, but if you do, be sure it is unsalted. It will taste salty if you don't.

I am addicted to greek seasoning and I brush pita bread with a little olive oil and the seasoning as well as putting olive oil and greek seasoning on a pork tenderloin and cooking it in tin foil in the oven. I usually serve it with the great spinach and rice pie from CL. It's our version of a quick greek night.
Sometimes I buy pocket pitas and do the pork tenderloin cut it up and add tomatoes cucumber, etc.
Just a couple of suggestions using my favorite spice.

In the May issue of CL they have a Greek bread recipe to accompany the Lemon-Dill Bulgur Salad with Scallops (p. 168) that uses Greek seasoning.
