I am still not finding things with the search . . .

Anyhow, we were out today and purchased a nice basket of red peppers for $2.00. I am not trying to think of what to do with all these and came up with having roasted peppers for my sandwiches. Then it dawned on me that I have never roasted peppers before.

So, I found this step-by-step (http://www.cookinglight.com/cooking/cs/techniques/article/0,13803,232494,00.html) process. It looks pretty easy.

The roasted peppers I am familiar with seem to be stored in olive oil. Is that what one does afterwards? Are there other ways of preparing roasted peppers?

I wash my peppers and toss them whole on my gas grill. Once done, I put them in either a paper bag or a plastic container than then peel and seed when they have cooled. I just store them in a Tupperware container in my refrigerator, I don't add any oil, they seem to generate their own liquid.

I have roasted other type peppers and frozen them.

I just purchased roasted Hatch peppers from New Mexico. I have a Food Saver. Otherwise I would have frozen them individually, and then put them in freezer bags. I too have heard of storing them in oil, but I don't think that's necessary.

Bob, I prepare roasted peppers in the same mannner as shown on your link. Very simple. I have frozen them, but I usually prepare them for something I am making at the moment, like pizza, sandwiches , or the anti pasta kababs. My mom used to store them in EVOO and vinegar, but I don't know the proportions, and she is no longer here to ask.

I made these tonight. Very simple. It is always good to add something new.
