Just wanted to review the Carrot Cake Bars from the Cooking Light recipe finder...
I made them this evening, hoping to use up some whole wheat flour and some buttermilk. The recipe fit the bill perfectly.
I like these "bars"--I think the name is a misnomer, sort of. I would call them something like carrot oatmeal snack cake. It's a nice moist oatmeal-y cake with the added bonus of whole wheat flour, carrots, and raisins.
I could see eating for anything from a quick breakfast to a dessert. And at 121 calories, it's a great snack for you!
