View Full Version : Need dinner ideas for my DH

Hi,

I need some help planning some dinners for my DH. He is going to take a class on Monday and Wednesday nites and I want to pack him food that he will not have to warm up. He sometimes has turkey sandwiches for lunch so I wanted to give him some variety.

Any ideas?

How about using pita bread or wraps in place of the typical bread? You can really get creative with the 'stuffing' you use. Oroweat (OT: aha Emily, thought you were going to catch me misspelling Oroweat, huh?! Good thing I had a package here!! http://www.cookinglight.com/bbs/wink.gif ) has some awesome (IMHO) whole wheat bagels that have, for lack of a better description, more of a bread-like texture that is yummy with a thin layer of cream cheese, tomato, lettuce, cheese slice or whatever you'd like to put on it. Plus, it is very filling. I would think salads would work with the dressing on the side or even lentil or bean salads. Also, there is nothing wrong with room temperature left-over pizza!! http://www.cookinglight.com/bbs/biggrin.gif

How about the delicious Peanut Dip (April's issue)? They talk about doing "grown-up" peanut butter sandwiches with shredded carrots on yummy bread. I also like the wrap idea. Maybe a tunafish wrap with Asian seasonings, or ham and cheese, or cheese, avocado, tomato? Or grilled veggies and cheese?

One question...at what time of day will you be packing these dinners? If it is early in the day for him to carry from work then freshness becomes a real issue.

I will be packing his lunch and dinner in the mornings. He will go directly from work to his class in the evening. He will be able to refrigerate his lunch and dinner at work.

Different salads would be good and you could send pitas or tortillas for him to stuff or roll before eating (both tend to get a bit soggy if prepared too early). I have a recipe for Ham 'n Swiss rice salad, brat & potato salad, fajita salad, you could do chicken salad in a tomato, seafood pasta salads.
