This was terrific! Extremely easy to prepare, very refreshing, and a nice weeknight dinner. The dressing is just the right amount of sweet and tangy, and the spices on the chicken are flavorful-spicy but not particularly hot-spicy. My 3-yr-old even enjoyed this one. We don't eat jicama very often, but this recipe showcased it perfectly.

This has been on my list of things to try! It sounds like it would make a good summer dinner, or a nice take-to-work lunch. Now I'll be sure to try it out! Thanks.

I made this for lunch yesterday using leftover grilled chicken breast from fajitas. It was excellent. I blended the chili powder, cumin and red pepper in with all the other ingredients.
