Would anyone happen to have a broccoli/cauliflower salad that they really enjoy. I had one sometime ago from a 'deli' and it was so good, creamy dressing, think a little bacon and onion. Thanks. Lena

I have a friend that makes a dressing of mayo and sugar for broccoli and anything else..you could certainly add onion and bacon to it!

Here at work we serve a popular Broccoli salad-- Just blanched broccoli, shredded cheddar, and Ranch dressing. Add Bacon bits if you like.

Certainly not lite, but very popular!

This one's wonderful -- everyone always asks for the recipe when I make it, even with low-fat cheese and mayo. I don't have the exact measurements with me, so I'll check on the amounts when i get home, if the recipe looks like something you'd be interested in http://www.cookinglight.com/bbs/smile.gif

2 large heads broccoli, chopped into bite-sized pieces
small red onion, finely chopped
1 can water chestnuts, drained
1 cup shredded mozzarella

Dressing:
mayo (I use Hellman's low-fat)
sugar
red wine vinegar

I think the original recipe may have called for bacon, to be crumbled on top of the salad, but I didn't copy it down as such because I knew I wouldn't use it. http://www.cookinglight.com/bbs/smile.gif

We made this often when I worked at a Deli, and I still make it often because I LOVE broccoli. People around here are gonna freak about the ingredients-but you can make it healthy, http://www.cookinglight.com/bbs/wink.gif! You can use your favorite low/non/fat-free stuff, and adjust it to your creamier taste with less/more veggies. http://www.cookinglight.com/bbs/smile.gif Zinnia

Broccoli, Bacon, & Cheese Salad

1 small pkg. slaw mix from Produce Dept. (or chop your own Nappa, carrot, & a slice of purple-cabbage mixture)
1 c. mayonnaise
2 t. vinegar
2 t. sugar
1/2 c. or more bacon bits, (real, turkey, or phony)
1/2 c. or more shredded cheddar cheese, (use pepper-jack for a bite if you want)
1/3 c. finely minced red onion (optional)
1 head fresh broccoli chopped, (fork-ful sizes-your choice)

Blend mayonnaise, sugar, and vinegar together with a whisk and blend well; add slaw mix and mix well. Fold in the broccoli and other ingredients. Cover and refrigerate (at least an hour or more). Stir well before serving and depending on your crunch-preference of the veggies, this can be made the night before. Keeps 2 days in the fridge.

My favorite (and simple) broccoli salad is raw broccoli flowerettes, diced tomato (halved grape tomatoes would be great too!), any low fat cheese (we like Monterey Jack) cut in small cubes. Toss this with a light vinegarette dressing, and it's a great summer salad.

Here's our family favorite...

Broccoli Salad

1 bunch fresh broccoli cut into small pieces
6 green onions, sliced
1/2 c. celery, chopped
1/2 c. white raisins
1/2 c. sliced almonds
6 slices crisp bacon, crumbled (I use the low fat bacon bits)

Mix above together. Add dressing (below) just before serving.

Dressing Recipe
1/2 c. no fat mayo
1/4 c. sugar
2 Tbsp. vinegar

Mix together vigourously.

I make a similar salad using red onions, dried craisins, no almonds or bacon. I think it tastes better when it sits in the fridge for a few hours or overnite.

I make a broccoli salad that is very similar to others mentioned already, except that I use apple cider vinegar. The flavor is fantastic. I make it often for my weekly bible study/supper club and the bowl is always empty. I have also made the salad using broccoli slaw mix, rather than florets.

3 crowns broccoli
1 small red onion (sliced thin)
1/2 cup golden raisins
8 strips bacon (cooked and cut up in small pieces)
1 cup mayonnaise
1/2 cup sugar
2 tablespoons vinegar

Chop broccoli peeling stem if necessary. Combine with onion, raisens and bacon.

Blend mayo, sugar and vinegar in small bowl. Pour over broccoli mixture. Do not stir. Chill for several hours on overnight. Mix just before serving. You may add 1/4 cup of sunflower seeds before serving

Broccoli Salad with Feta Cheese

3 crowns broccoli -- chopped
1 red onion -- thinly sliced and sauted
8 strips bacon -- cooked
1 cup Craisins
1/2 cup mayonnaise
1/4 cup sugar
1/2 cup yogurt -- plain
2 tablesoons vinegar
1/4 cup sunflower seeds
1/2 cup feta cheese

Mix onion, broccoli, and craisens. Set aside in bowl

In separate bowl, combine mayo yogurt, sugar and vinegar. Pour over broccoli mixture. Chill a few hours

Before serving toss salad and top with pieces of cooked bacon, sun flower seeds and feta cheese.
