As soon as the temp dips below 90 here in Atlanta, I'm thinking fall! We're going apple picking this weekend with my daughter and I will hopefully have lots of yummy apples to cook with.

DH loves apple dumplings (as do I) and I wanted to find a good recipe. I could even put together my own apple center from a cinn. apple recipe I make with pork chops sometimes, but wasn't sure about the outside crust. If I do this, can you use pie crust recipes for dumplings and just fill in the inside and bake? How bout the pre-made crust (store bought) kind? Do they work?

Here's the recipe I use, from my mom's old Betty Crocker... And yes, pie crust is what I've always used. I included the recipe from the cookbook but I've used store-bought as well and it worked fine.


Apple Dumplings

Make pastry (see below) for number of dumplings desired. (Pastry for 9" Two-crust Pie makes 6 dumplings, for 8" Two-crust Pie, 4 dumplings). Roll out pastry a little less than 1/8-inch thick and cut into 7-inch squares. Pare and core a medium tart, juicy apple for each dumpling. Then prepare a syrup.

For 6 Dumplings

Boil together for 3 minutes:
1 cup sugar
2 cups water
3 Tbs butter
1/4 tsp cinnamon

Fill the cavities of apples with mixture of:
1/2 cup sugar
1 1/2 tsp cinnamon

Dot with: 1 Tbs butter

1. Place apple on each square of pastry. Fill core cavity with cinnamon and sugar mixture... dot with butter.

2. Bring opposite points of pastry up over the apple, overlap, moisten and seal.

3. Lift carefully, place a little apart in baking dish. Pour hot syrup around dumplings.

Bake immediately until crust is nicely browned and apples are cooked through (test with fork). Serve warm with the syrup and with cream or whipped cream.

Temperature: 425 degrees F
Time: Bake 40-45 minutes


Standard Pastry for Two-Crust Pie

For 9-inch pie

2 cups sifted flour
1 tsp salt
2/3 cup lard or 2/3 cup plus 2 Tbs shortening
1/4 cup water

1. Measure flour into mixing bowl and mix salt through it. With pastry blender, cut in shortening until shortening particles are the size of giant peas.

2. Sprinkle with water, a Tbs at a time, mixing lightly with a fork until all the flour is moistened.

3. Gather dough together with fingers so it cleans the bowl.

4. Press firmly into a ball. Then roll out, or keep in waxed paper in refrigerator.

These look wonderful to me!

These are not your typical dumplings. They look like cinnamon rolls, but they're really pastry wrapped around a shredded apple filling.

Spiral Apple Dumplings

2 cups granulated sugar
2 cups water
1/4 cup margarine or butter
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup shortening
2/3 cup milk
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
3 cups shredded -- peeled cooking
apples (3 to 4 medium), such as Golden
Delicious, Rome, Granny Smith, Jonathan,
or Newton Pippin

1. For sauce, in a large saucepan, combine 2 cups sugar, the water, margarine, 1/4 teaspoon cinnamon, and nutmeg. Bring to boiling and boil for 5 minutes; set aside (should have about 2 cups sauce).

2. For dough, in a large mixing bowl, combine flour, baking powder, and salt. Using a pastry blender, cut in shortening until pea-size. Make well in center. Add milk all at once. Stir just until moistened. Knead dough on a lightly floured surface 10 to 12 strokes or until nearly smooth. Roll out to 12x10-inch rectangle.

3. For filling, combine 1/4 cup sugar and 1/2 teaspoon cinnamon; set aside. Sprinkle apples evenly over dough. Sprinkle with sugar mixture. Roll dough into spiral, starting from a long side. Pinch seam to seal. Cut into twelve 1-inch-thick pieces. Place in 13x9x2-inch baking pan. Pour sauce over dumplings. Bake in a 350 degree F. oven about 50 minutes or until golden. Makes 12 servings.

This is exactly the type of thing I was looking for, except I wanted to use cut up apple pieces instead of shredded or whole, which I think will work in this recipe.
