Before, if possible.

Well, since I have a little one, I try to do all prep that I can when she is down for her nap. It just makes preparing dinner that much easier, especially when she is hanging on my leg whining to eat.

I like to have everything prepped and sitting out on the counter, that way I can feel like one of those chefs on tv, pouring stuff out of ramekins or bowls into the mixing bowl. It makes me feel professional, I guess. http://www.cookinglight.com/bbs/smile.gif

I agree. Having everything in little bowls also helps me enjoy it more. No scrambling around during cooking. At first I thought the bowls would be a hassle because of the extra clean up - but no - I think it is SO worth it.
