Let me live through you. I am having leftover mac and cheese tonight. So what are your serving up (or being served) tonight?

It is DS's first day of kindergarten(I can't believe it!) so he gets to pick dinner. He is going with Rachael Ray's mini-meatball soup. Yesterday DS1 started third grade and he picked Rachael Ray's Spaghetti Carbonara.(we are on a Rachael Ray kick around here)

I'm finally trying the Blueberry Chicken Val posted a long time ago. We are also having a rice pilaf and salad.

Tonight we're having mustard greens with tomatoes and chiles (from the GREENS cookbook) with a side of simple baked tofu (from MOOSEWOOD).
I'm having Indian stuffed eggplant for lunch today, though (YUM) -- also leftovers from last night.

*garlicky green beans?
But, we have a showing tomorrow with lots to do to get ready and we have a bunch of little dribs and drabs of leftovers in the fridge, so I'm thinking that leftovers will be winning out. Oh well.

I'm going out with a friend for a bite and cocktails after our pedicures. :D However, I will be making a roasted veggie pizza on ww Boboli for DH= before I leave. Hopefully there will be leftovers for my lunch tomorrow.

Tonight we're having Risotto with Tomatoes, Beans, and Basil (can't remember exactly what it's called) from Fields of Greens. I wanted to make this a couple of weeks ago but never got around to it. Tonight I am going to make it! I even made the Tomato-Mushroom Stock last night to prepare. :)
With the risotto, we'll probably have salad of some sort and maybe another veggie, depending on what we get in our CSA box tonight.

Thanks to Stephanie (gertdog), I am now addicted to meatless meatballs and am craving them today. After trying TJ's and WF's, I found Ian's, which are my favorite of them all, so probably I'll just simmer them in a jarred organic sauce and have a hero. Or two.

For a quick and easy fix to the chicken I set out, I think I'm making Balsamic Raspberry Chicken, risotto, and asparagus. Oh, and a large glass of vino! :D

This is my first post so I hope it goes through OK. (Have pretty much been a "lurker" in the past!)
I just wanted to say to veschke that I made the Cumin Crusted Pork Tacos last night and they were delicious. My husband and 9-year-old daughter both really loved them (although my daughter did pick out the avocado - still working on that one).
Tonight I will be making the Chicken Broccoli casserole - also from this month's CL.

I'm coming down with a cold today, so I'm going to make myself a big pot of homemade chicken soup and serve it with some of the best cornbread I've ever had-the recipe from the Wooden Spoon Bread Book. (A very fun book, BTW. I saw someone had listed as one of their favorites on that thread a while back. It's a very good, basic bread book)
If the family is very, very nice to me, I might even share! ;)

Seared scallops with white wine added after searing and poured over pasta and a tossed salad. An easy dinner. I season the scallops with Mrs. Dash's tomato and basil seasoning and then dredge them in panko bread crumbs...gives a nice crunchy taste.
We're having CL's 4 Cheese Stuffed Shells with Smoky Marinara and garlic bread.

Let me know how this is! We were supposed to have a different risotto from that book last night, but I ended up making something else because I didn't have all the ingredients on hand for that particular stock. I plan on making it sometime this weekend, though. :)
As for tonight, I'm not sure yet. We planned on having grilled pizza, but DH is under the weather and doesn't feel like messing with the grill. And I'm a little intimidated by it, so I might just bake it in the oven. Or make something else entirely. I have plenty of recipes I could try, that's for sure!

I am going to make Rachel Ray's Thai Glazed Chicken Lettuce Wraps and her Hot and Cold Sesame Noodles. Tomorrow is Tyler's Arroz Con Pollo and Plantains:) And last night was Chicken Drumsticks with Muhummara sauce over Curried Couscous- leftovers are coming with me tonight (i work night shift- so will be enjoying these around midnight:)) to make all my coworkers drool as they eat their not-so-good frozen dinners!!! :cool: :D

I came home a few minutes ago, not sure what to make, and found that my husband had chicken on the grill and seasoned rice and veggies on the stove. I'll toss a salad together and we'll be all set! It will be simple but good.

I'm trying something new tonight to help use up my garden tomatoes. The recipe is called roasted tomato penne. The tomatoes roast for a couple of hours with a basil/pesto type spread. The house already smells heavenly. I probably do a salad and some fresh bread with it.
We just had Garden Tomato and Basil Pesto Pizza (http://food.cookinglight.com/cooking/display/recipefinder.dyn?action=displayRecipe&recipe_id=1087068). My wife had an early function to attend to tonight and I leave in a few minutes for one of my own. This made for a simple and quick meal, but one which was tasty. We both agreed that this is a good dish to have for a night like tonight.
Even our 14-month old enjoyed it. :D

Jen- I got this several years ago from a guy called Cajun Papa on a food board. It can be tamed and I know you will use less cheese as I do.
It is still good. By the way, if you ever eat at Grove Grill, the Shrimp and Tasso Ham on Grits is fabulous
Jalapeno Grits Casserole 6 generous servings
4 cups water
1 t salt
1 cup grits (any kind)
2 cups plus 1/2 cup cheese ( Monteray Jack, Cheddar, Pepper etc)
2 eggs, beaten
2-4 cloves garlic, minced
1 4 oz jar chopped pimentos
1/4 cup Jalapeno peppers, sliced into rings
1 small can sliced black olives
Preheat oven to 350. Grease a 2 quart deep casserole and set aside.
Bring water to boil, add salt and grits. Cook until liquid absorbed, according to package directions, stirring occasionally
Add and quickly stir in 2 c cheese, eggs, garlic, pimentos and peppers. Pour into casserole
Sprinkle remaining cheese on top, sprinkle with black olives.
Bake until browned on top, 30-40 minutes.
Let stand at room temp at least 10 minutes before serving.
Can be made a few hours early so it can set and then warm in microwave

Tonight, I'm tried a new recipe-Misoyaki Glazed Salmon with stirfried green beans and rice. I made the marinade last night and it had all day to soak up the yummy flavors.
I haven't been able to eat fish since I became pregnant with my second son. I was hoping after I gave birth to him, my taste for fish would return but it's been 8 months and I'm still having a hard time eating it. My dh and ds (3 y/o) LOVED it, but it tasted too much like fish to me. <sigh> I miss eating fish, esp. sushi. About all I can stomach is a filet-o-fish from McDonalds. How sad! :( Anyone else out there develop a food aversion while pregnant? When does it go away?

Honestly, I hauled out a recipe I hadn't made in more than 20 years. Burgundy Pepper Steak -- sort of "upscale peasant food" if you will! :p Published in a hospital employee cookbook in 1977 (by the chief pharmacist's wife). DH raved about it and asked for seconds. I had forgotten how good it is, and after 20+ years of cooking, I was even able to lighten it and not sacrifice any flavor.
Served over a packaged white-and-wild rice mix that I found at Woodman's tonight. It was something like $1.39 for a package that makes three servings. I know it would be cheaper to make my own white/wild rice blend, but heck, to just boil water and rip open a package....I'm sold!

We had Rival's BBQ Turkey Sloppy Joes (off this BB), steamed green beans, and sliced tomatoes. A fast, easy supper, but it was good. I made the joes in a pan instead of in the slow cooker since I had not thawed the meat enough ahead of time.
Tonight I am seriously considering pizza and a bottle of red :) TGIF

Well, we ended up having grilled cheese sandwiches last night since DH wasn't feeling well and wanted something easy and comforting. He had his with smoked gouda and bacon; I made one for myself from the Greens Cookbook: Grilled Cheese with Smoked Chilies and Cilantro. Very very yummy. :)

Gail: Here's our favorite cornbread recipe, from the Wooden Spoon Cookbook. It can sit out with our annual Super Bowl Chili Buffet and not get dried out. I know there have been many threads about cornbread, and I enjoy many different kinds, but this is the one I come back to time and again.
Preheat oven to 400° Grease a 9 x 12" Pyrex baking dish (Note: I use an 11 x 7 or 9 x 13, because that's what I have. My preference is the smaller pan, because I like it really thick.)
Sift together and set aside:
2 cups all purpose flour
2 tsp baking powder
1 tsp baking soda
3/4 tsp salt
Beat together in a large bowl, in this order:
2 eggs
3/4 cup sugar
2 cups buttermilk
1/4 cup melted butter, slightly cooled
1 cup stone ground yellow cornmeal (Note: I really, really recommend the stone ground cornmeal. I use Hodgson Mills. It makes a huge difference from the Aunt Jemima type stuff.)
Stir dry ingredients into the buttermilk mixture. Turn into prepared pan. Bake at 400° for 25-30 minutes, or until wooden pick inserted into the center comes out clean. (It always takes mine longer, but my oven is horrible) Serve warm. To serve leftovers, reheat for a short time in the microwave, or split, butter, and bake until toasty in the oven.
